Wednesday nights are the worst. The weekend is so near and yet so far! I cannot complain (yet) since I don’t do all the cooking at home, but for those who do, I can only imagine how exhausting it must be to get back home from work and start another huge task. I love cooking, but I doubt how much I’d be able to do when all I wanna do is relax on a Wednesday night and watch Modern Family! :)

These feelings rarely occur but when they do, I don’t blame myself for the lack of love for cooking (because clearly, we all have our low days!). I simply go with the flow and cook something so quick, you’d never even know I was in the kitchen! This Almond Butter Pasta is one such dish I discovered on one of my free-flow-form-of-cooking days. And this is a recipe I would keep going back to again and again because it is not just a quick one pot meal, but it is also vegan and rich in proteins!

You’ll need –

Heat oil in a pan and add the garlic and onions.

Cook for a minute or until they are transparent

Add the chopped tomatoes and mix well. Keep stirring frequently or the mixture might burn.

Once the tomatoes reduce to a mush (about 5-8 minutes) season with salt, pepper, oregano and tomato ketchup.

Mix well and let it cook for another 2-3 minutes.

Add the Almond Butter to the sauce.

Add a splash of the starchy cooking water and mix well. Let it boil for 2 minutes.

Add the cooked Pasta & mix well. Serve hot garnished with Almond Slivers.

Ingredients
  • 7 oz (200 grams) Spaghetti (or any pasta of your choice)
  • Water (to cook the pasta)
  • 2-3 teaspoons Vegetable Oil / Olive Oil
  • 2 cloves Garlic, minced
  • 1 cup finely chopped Onions
  • 1 cup finely chopped Tomatoes
  • 2 teaspoons Ground Black Pepper
  • 2 teaspoons Oregano powder
  • 1 teaspoon Salt (adjust to taste) {Plus 2 tablespoons for cooking Pasta}
  • 2 teaspoons Tomato Ketchup / Tomato Paste
  • 1 tablespoon Almond Butter
  • Parmesan Cheese (optional) {or any kind of cheese}
  • Almond Slivers for garnish (optional)
Notes
  • You can add other veggies while sauteing onions like bell peppers, lives, corn etc. Any fresh produce is okay
  • If you're in a rush, you can use tomato puree (canned tomato) and onion paste too and fry for 4-5 minutes till the raw smell goes away
  • If you don't have almond butter, you an use regular butter or peanut butter as well
  • For extra spice, sprinkle hot pepper flakes and serve
Instructions
Cook the Spaghetti
  1. Bring a large pot of water to a boil. Add 1-2 tablespoons of Salt and add the Pasta / Spaghetti. Boil for 7-8 minutes until the pasta is al dente, i.e - the pasta should be well cooked and still retain a bite to it. (Just cook according to package instructions)
  2. Reserve about ¼ cup of the starchy cooking water to add to the sauce.
Meanwhile, make the Almond Butter Sauce
  1. Heat oil in a pan and add the garlic and onions. Cook for a minute on high or until they are transparent
  2. Add the chopped tomatoes and mix well. Keep stirring frequently or the mixture might burn. You can also close the pan to cook the tomatoes faster
  3. Once the tomatoes reduce to a mush (about 5-8 minutes) season with salt, pepper, oregano and tomato ketchup. Mix well and let it cook for another 2-3 minutes.
  4. Add the Almond Butter to the sauce. Add a splash of the starchy cooking water and mix well. Let it boil for 2 minutes.
  5. Add the cooked Pasta & mix well. Grate lots of cheese and mix
  6. Serve hot garnished with Almond Slivers.
Note
  1. When you're cooking on high to cook faster, make sure you stay close by and stir / mix frequently to avoid burning. Otherwise, cook everything on medium heat.
  2. You can also saute other veggies like bell peppers, carrots etc. if that is what you have at home.
  3. You can even cook the spaghetti / pasta before hand. Before mixing with the sauce, wash it well and heat it in microwave for 1-2 minutes to get it hot.
