This is the simplest version of  classic Spicy Arrabbiata Sauce.

Today, I’m sharing the classic Italian spicy arrabbiata sauce recipe. Spicy, delicious and ideal with spaghetti or penne, this is an all-purpose sauce that takes 30 minutes (tops) to put together.

Arrabbiata literally means “angry” in Italian. The name of the sauce refers to the spiciness of the chili peppers. The more you add, the spicier your sauce will become (duh). It works well as a dipping sauce too.

While it is best served with penne pasta, I absolutely love spaghetti and that is what I served it with. You don’t have to add grilled veggies or chicken etc. Pasta Arrabbiata is meant to be just that – perfectly cooked pasta mixed with spicy arrabbiata sauce. But I love adding some textures to my food and hence usually always add some stir fried or grilled veggies along with the pasta. You can choose to skip it, if you wish.

This is one of the simplest tomato sauce recipes you’ll ever come across. All it takes is some tomato puree, garlic, hot pepper flakes and olive oil to make a very basic version of the arrabbiata sauce. Then of course, you can make additional variations by adding stuff like onions, bacon, pancetta etc.

Here’s how I make my simple, vegetarian Arrabbiata Sauce –

Simple tomato-based arrabbiata sauce recipe

Serves: 4 cups of arrabbiata sauce
Ingredients
  • 8 medium Tomatoes (Read note 1)
  • 1 Tablespoon Olive Oil (or alternatively vegetable oil)
  • 6 cloves Garlic, minced finely
  • 3 teaspoons Hot Pepper Flakes (adjust to suit your taste)
  • 1 teaspoon Sugar
  • 1 Tablespoon Salt (adjust to taste)
  • 2 teaspoons Ground Black Pepper
  • ½ cup Water
  • ¼ cup chopped Parsley (or cilantro)
  • Mixed spices - Oregano, Thyme, Parsley, Basil etc, - optional
To Serve
  • Pasta
  • Arrabbiata Sauce
  • Cheese
  • Grilled Veggies, Chicken, Bacon etc. - optional
Note
  • You need the puree of blanched tomatoes. You can alternatively also used canned tomatoes.
  • This recipe doesn't use onions. But you can use ½ cup onions for another variation
Instructions
  1. Boil tomatoes and peel the skin. Grind to a smooth puree. (or used ready made canned tomatoes or tomato puree instead)
  2. Heat oil in a pan. Add the minced garlic and hot pepper flakes. Fry for a minute on medium flame.
  3. Add in the blanched tomato puree or canned tomatoes and mix well. Reduce the heat to medium-low and allow it to cook for about 20 minutes or until the sauce is nice and thick.
  4. You should look for the raw smell of the tomatoes to go away. Flavor it with salt and pepper. You can also add more spices like oregano, parsley, thyme and mix well. Taste and adjust for seasoning. Switch off the flame.
  5. Garnish with fresh parsley. Mix well. Your arrabbiata sauce is ready
To Serve
  1. To serve pasta arrabbiata, simply cook pasta till al dente. Add enough of the sauce to the pasta. You can also add grilled veggies, chicken, bacon etc. Mix well. Grate some cheese over the top if desired and serve.
  2. You can use this as a sauce on Pizza base or even as a dipping sauce.
Note
  1. If you want, you can also add some finely chopped onion while frying the garlic

This is your simple Arrabbiata sauce! You can use it for pasta right away or store it in an air tight container in the refrigerator for up to 7 days. This also works well on pizzas and as a dipping sauce.
