This post should come with a warning : Your whole house will smell insanely good because of the vanilla in the dough! Oh ya, my quest for eggless Baked Doughnuts ends here. After years and years of reading about the incredible goodness that is the doughnut, I decided it was time for me to bake some.

Actually, doughnuts are deep fried. But since yours truly cannot afford to put on any more weight, baking is an alternative I turn to frequently. Not that these doughnuts are healthy. O no. Slathered with sugar, these sugary bits wouldn’t feature on Jillian Michel’s favorite foods list. :P But at least, you have the satisfaction of not using so much of oil to deep fry! So in a way, you can say that these doughnuts are healthier less fattening.

Eggless Vanilla Baked Doughnuts | Baked Donuts The inspiration to bake doughnuts really comes from a series book I read in school called the “Enchanted Forest” by Enid Bylton. Oh, how I loved the kids’ adventures up on the Faraway Tree along with their magical friends. :)

EGGLESS BAKED DOUGHNUTS RECIPE

You’ll need –

In the curd (or yogurt), add baking soda & mix well. Set aside for 5 minutes

You’ll see air bubbles forming all over the curd

Add the salt, sugar & instant yeast to the flour & give a good mix.

To the warm milk, add the shortening (or butter) and vanilla & mix well until it melts.

Add this to the flour and mix until the dough starts to come together.

Then add the baking soda + yogurt mixture.

Knead for 10-15 minutes by hand or 7-8 minutes in an electric mixer till you have a smooth & elastic dough.

Place it in a well oiled bowl, cover with plastic wrap or clean kitchen towel & let it rest for 1 hour or till it doubles in volume.

Using a rolling pin, stretch out the dough. Don’t roll it too thin or you’ll end up with tortilla instead of doughnuts! :) Since I was making mini doughnuts, I rolled upto about 1/2 an inch.

With a cookie cutter or any glass with a sharp round mouth, cut out round pieces of dough. Do not throw away the excess. You can roll it out again & do the same thing

If you have a smaller cutter to make a neat hole in the center, use that. Since I didn’t, I used a knife to just make untidy holes in the middle. I’m sure you’ll do a much better job than me! :D

Place all the doughnuts on a baking sheet (oiled or sprayed with non stick cooking spray). Cover loosely & let it rise again for 30-45 minutes.

Preheat the oven to 180C / 375F. Brush the top of each doughnut with melted butter / egg wash & bake for 12-15 minutes or until the top is golden brown.
Eggless Vanilla Baked Doughnuts | Baked Donuts To Serve: You can dip each doughnut in chocolate sauce or use any other frosting you like. I decided to make it simple. I brushed the top of each donut with some softened butter while still hot & dipped in granulated sugar!

Ingredients
  • 1¼ cups All Purpose Flour
  • 1.5 TBsp Vegetable Shortening (or Butter), at room temperature
  • ⅔ tsp Instant Yeast (*Read Note)
  • ⅓ cup Warm Milk
  • ¼ cup Sugar (any sugar)
  • 4 TBsp Thick Curd / Plain Yogurt / Sour Cream, at room temperature
  • ⅛ tsp (a pinch) Baking Soda
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt
For the topping / glaze
  • Chocolate sauce, cream cheese frosting, buttercream frosting etc. OR
  • Butter + Granulated Sugar
Note
  • If you're using active dry yeast, the first few steps may differ as you have to "activate" the yeast first. (Read Note below for the steps)

Note - YEAST
  1. If using active dry yeast, mix the sugar & yeast into the warm milk & let that rest for a few minutes until you see bubbles forming. Then mix the butter & vanilla in the milk & then add to the flour & proceed.
