Bread Pizza is often a go-to snack in our household. There couldn’t be anything easier to make on short notice. However, when time permits, why not go the extra mile and make these little bread pizza cups? Although they taste the same as a bread pizza, the (little extra) effort that goes into making these bread cups does not go unnoticed. And it is really fun to be eating cupcake-lookalike made of bread and filled with pizza toppings, don’t you think?

You’ll need –

In Microwave safe bowl, add ketchup, butter, ground pepper, oregano and heat for 30 seconds or until butter has melted. Mix well to form a sauce and set aside

Grease the cupcake molds with oil / butter. Preheat oven to 200C. Cut of the edges from all bread slices.

Quickly dip the bread slice in water and squeeze water out to make it soft. Since there is a higher possibility of bread tearing in this method, you can simply wet both hands well & press the bread between both palms to wet and soften it.

Place the bread slice on top of a cupcake mold. Gently press it in ensuring you form a cup. If the bread breaks up, it is okay. Just stick it back in the torn place. If you want all even shaped cups, you can cut off the excess bread coming outside the mold with scissors. But it is not necessary. I decided to leave it as is.

Brush each bread cup with oil

Bake at 200C for 5-8 minutes or until the bread has crisped up.

Fill each cup with the sauce mixture and top with your favorite toppings

Add a slice of cheese / grate cheese

Bake for 5 minutes or until cheese has melted

Let them cool in the pan for a while and then remove. They are fairly easy to remove. Else use a knife to loosen up the edges.

Serve hot with Mayo / Ketchup

Ingredients
  • 6 Bread Slices (white or Brown or Multi-grain)
  • ¼ cup Water
  • Vegetable Oil (for brushing the cupcake molds & bread) {or use melted butter}
  • 6 Tablespoons of Tomato Ketchup
  • 1 Tablespoon Butter (or vegan butter)
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Oregano / Pizza-mix
  • 2 cloves of Garlic, minced
  • ¼ cup finely chopped Onions (or mixed veggies)
  • 3 tablespoons boiled Corn kernals
  • 6 Olives, chopped (black / green)
  • Cheese (Mozzarella / Cheddar / Parmesan) (Or vegan Cheese)
Instructions
Initial Preparation
  1. Grease the cupcake molds with oil / butter. Preheat oven to 200C.
  2. Add tomato ketchup, butter, pepper, oregano, minced garlic in a microwave safe bowl and heat for 30 seconds until butter has melted. Mix well to form a smooth sauce mixture.
  3. In a bowl, add all the chopped up veggies and a pinch of salt and mix well. Set aside
Making the Bread Pizza Cups
  1. Cut of the edges from all bread slices.
  2. Wet both hands and press a bread slice between them tightly to soften it up.
  3. Place the bread slice on top of a cupcake mold. Gently press it in ensuring you form a cup. If the bread breaks up, it is okay. Just stick it back in the torn place. If you want all even shaped cups, you can cut off the excess bread coming outside the mold with scissors. But it is not necessary.
  4. Brush each bread cup with oil. Bake at 200C for 5-8 minutes or until the bread has crisped up.
  5. Fill each cup with the sauce mixture and top with the mixed veggies. (Do not add too much or it will become soggy. About 1 teaspoon of Sauce and 1-2 tablespoons of mixed veggies per bread cup should suffice)
  6. Add a slice of cheese / grate cheese on top of the veggies
  7. Bake for 5-6 minutes or until cheese has melted
  8. Let them cool in the pan for a while and then remove. They are fairly easy to remove. Else use a knife to loosen up the edges.
  9. Serve hot with Mayo / Ketchup
