There was a point when I was baking cakes and brownies and cookies back to back and we had so much cake leftover that I didn’t know what to do with it! I mean, for how many days can you have the same chocolate cake / brownie? To spruce things up, I made some Vanilla pudding and decided to combine the two like a cake custard. But then I could visualize how unappealing it would “look“.. Cake crumbs mixed in custard… a gooey mess for sure!

And so, I decided I’d make a layered dessert.. Thus this Cake Pudding Trifle was born. If you have some leftover cake / brownie, make this dessert and see how much you will love it!

Cake Pudding Trifle Recipe

To quarter cup of milk, add the custard powder and mix well.

Bring the remaining milk and sugar to a boil.

Slowly add the custard mix to the milk while stirring it constantly

If you have / eat marshmallows, add 2-3 marshmallows (they help thicken the pudding better)

Stir constantly on low heat until the mixture thickens and coats the back of a wooden spoon

Let the pudding cool a bit (keep stirring constantly to avoid formation of skin)

To form the trifle, add some cake crumbs to the serving glass. Drizzle some sugar syrup / rum / juice over it to keep it moist.

Add the next layer of pudding and sprinkle some funfetti / chocolate chips – if required.

Repeat the same with another layer of cake crumbs. If you want, you can also add some chocolate paste / sauce

Finish off the final layer with pudding. Decorate with funfetti. Close the serving glasses with plastic wrap / aluminum foil (make sure it touches the pudding layer) and chill until set.

Ingredients
For the Vanilla Pudding
  • 1 cup Milk or Cream
  • 1 tablespoon Vanilla Custard Powder (*Note 1)
  • ¼ cup Brown Sugar (or regular sugar) {adjust to taste}
  • 2 Marshmallows (optional) (*Note 2)
For the Cake
  • 1 cup crushed Cake Crumbs (*Note 3)
Others
  • Sugar Syrup / Rum / Cherry Syrup / Orange Juice (*Note 4)
  • Funfetti / Sprinkles (optional)
  • Chocolate Sauce / Paste (optional)
  • Cake Crumbs (optional)
Note
  • If you don't have custard powder, you can substitute with cornstarch (cornflour), a pinch of yellow color and 1 teaspoon Vanilla essence per 1 tablespoon.
  • If you can find Vegan Marshmallows, use them. If you can't (and you don't eat regular marshmallows), you can leave it out. The custard will still set well. Marshmallows just aid in setting the pudding
  • For the cake, use leftover chocolate cake or any cake you have on hand
  • Sugar Syrup / Rum / Cherry Syrup / Orange Juice - used to keep the cake layer moist. Because you are going to be chilling the dessert, there is a chance that the cake layer might become hard. Pouring some kind of liquid keeps it moist
Instructions
For the Pudding
  1. To quarter cup of milk, add the custard powder and mix well.
  2. Bring the remaining milk and sugar to a boil.
  3. Slowly add the custard mix to the milk while stirring it constantly
  4. Add 2-3 marshmallows (they help thicken the pudding better) and mix well.
  5. Stir constantly on low heat until the mixture thickens and coats the back of a wooden spoon.
  6. Pass the mixture through a sieve to cash any lumps
  7. Let the pudding cool a bit (keep stirring constantly to avoid formation of skin)
Forming the trifle
  1. To the serving glass, add 2 tablespoons of the cake crumbs
  2. Drizzle some sugar syrup / rum / juice over it to keep it moist.
  3. You can also add chocolate paste on top of the cake layer.
  4. Add 4-5 tablespoons of the Pudding.
  5. Sprinkle some funfetti / chocolate chips - if required.
  6. Repeat the same until the serving glasses are full.
  7. Cover the glasses with plastic wrap / aluminum foil (touching the pudding layer). Chill for 3-4 hours or until set.
  8. Before serving, decorate the top with sprinkles / chocolate chips / cake crumbs / whipped cream etc.
Notes
  1. You can build the trifle in any way you like. If you want, you can crush cookies between each layer. You can have a thick pudding layer and thin cake layer. It is entirely your choice. But finishing up with pudding layer looks good
  2. When you're covering the pudding, make sure the wrap touches top pudding layer before chilling to avoid a skin from forming. (This of course would not apply if your top layer is cake and not pudding)
