Some recipes are borrowed, some passed down and some – like the recipe for these no-knead garlic rolls – are invented by my over imaginative brain.

There is a lot of thinking about food going on in my head all the time. I’ve been branded an obsessive foodie by many. And why should I be embarrassed about it? Yes – I may not seem normal to my next door neighbor; who cannot fathom why my eyes pop out when I smell beautiful onions caramelizing or when I see mint leaves growing right outside in the garden like there’s no tomorrow! The truth is – my brain goes into a recipe overdrive every time I see or get my hands on fresh ingredients.

One day, I got myself some fresh, subtly pungent garlic cloves and plucked green chilies from my chili pot… and got to thinking about all the classic possibilities I could make with 2 most commonly used ingredients. I had made numerous variations of the garlic bread before. The one thing all of them involved was – KNEADING. While there isn’t anything wrong with getting some elbow grease, wouldn’t we all like to do away with the kneading a few times? After a few different attempts, I finally made some super soft rolls with a dough that barely involved any kneading!

I have a confession to make.

I’m not so crazy about too. much. cheese.

There. I said it.

Now, I do love cheese – as long as it is subtle and just enhances the dish’s flavor a bit. I don’t like cheese to overpower the dish. What I do love is the taste of roasted vegetables married into a mild cheesy pizza crust. And hence, the vegetable whole wheat pizza recipe.

While I do love the regular white crust pizza made with a regular pizza dough, I’m being the responsible, health-conscious adult here. 😉 I like to convert my favorite fast foods into healthy dishes so that I can eat them whenever I want. First things first. I know you’re thinking “why do these rolls look funny?”

Let me answer that for ya. A little someone that she was being economical. She thought she was cooking for herself so she decided to make a small batch. But she didn’t have the right pan for placing these rolls in. And what do you know? They decided to rise horizontally rather than vertically! Who is this great person, you ask? Why, you’re looking at her!

Now that we’ve got the initial awkwardness out of the way, can we get back to business? These rolls are no joke people…! Never have I dared to experiment with yeast . Besides my tried and tested pizza dough, I’ve rarely tried my hand and creating / trying recipes that contain anything but refined flour. But of course, we all try to make healthy choices along the way, don’t we? And Oats – being the wonder cereal that it is – makes for a great binder. These oatmeal dinner rolls contain part refined flour, part oatmeal and the usual – yeast, salt etc. They are low on fat (no butter) and can easily be converted to a vegan recipe by substituting the milk / cream wash with something else.

And best of all? these dinner rolls work for any meal of the day. And they retain their fluffy texture all day long!   (more…)
