Vada Pav. The name alone is enough to bring a smile on every Mumbaikar’s face.  I have fond memories of eating this delicious and filling snack almost every day during college. Vada Pav and Pani Puri were solely responsible for my brush with obesity in my late teens and early 20s. I’m healthier now, it’s all good. But my love for this snack still continues with an intensity like never before. I was delighted to recreate one of my favorite fast foods at home!

Go make some Vada Pav and enjoy it with a hot cup of Masala Chai.    (more…)

Fresh cubes of paneer delicately spiced with garam masala and sandwiched between fresh veggies in a hot and soft roll!

I’ve made a Subway-inspired Sandwich before. The success of that recipe inspired me to recreate some of my favorite Subs with an Indian twist. This paneer tikka subway sandwich combines the fine art of sandwich making with classic North Indian flavors. Unlike a typical paneer tikka masala, this recipe for Paneer tikka doesn’t call for too many ingredients. With a tonne of protein packed into a little sandwich, this is also a great healthy option for snack or lunch or dinner time.   (more…)

I’ve been kind of obsessed with Mexican cuisine a lot these days! Bean burgers, pico de gallo, stuffed peppers, vegetarian chilli, nachos.. you name it and I’ve been cooking + eating all of them! You can expect a lot of Mexican food coming up on this blog soon! 🙂

This veggie bean burger was one of my earliest attempts at making vegetarian Mexican food. It can be as healthy as you want it to be. If you have access to canned beans, this recipe will take you 30 minutes or less to make. But if you cook your beans, then I do suggest you plan and cook the beans ahead of time. The patties mixture can also be made and frozen for up to 3 days. If you’re not a fan of kidney beans, use whichever legume you like! This recipe really is forgiving and adaptable!    (more…)

There comes a point in every Indian vegetarian’s life when he or she stops to wonder –  Is Paneer the only substitute for meat? The answer is – mostly – Yes. Most of the fabulous recipes which use meat can be suitably modified to create healthy and tasty vegetarian dishes. And instead of the meat component, Paneer is used.

With around 18 grams of protein per 100 grams of Paneer, it is also widely accepted as an excellent protein source for vegetarians. Of course, there are many more faux meat substitutes available in the market these days. And then there is Tofu. But none of these substitutes come close to the flavor and flexibility offered by Paneer – IMO.

I created this burger recipe with leftover paneer. After having enjoyed a rich meal of Paneer Pasanda and Naan the previous day, I was in no mood for another royal meal. I wanted something light, fresh and healthy – and most importantly – I wanted to use up all the leftover paneer and grilled veggies. This burger is as healthy as it is delicious. And it hardly takes 15-20 minutes from start to finish. If you’re looking for a nice Indian-inspired veggie burger – this is a great recipe!   (more…)
