I’ve been kind of obsessed with Mexican cuisine a lot these days! Bean burgers, pico de gallo, stuffed peppers, vegetarian chilli, nachos.. you name it and I’ve been cooking + eating all of them! You can expect a lot of Mexican food coming up on this blog soon! ūüôā

This veggie bean burger was one of my earliest attempts at making vegetarian Mexican food. It can be as healthy as you want it to be. If you have access to canned beans, this recipe will take you 30 minutes or less to make. But if you cook your beans, then I do suggest you plan¬†and cook the beans ahead of time. The patties mixture can also be made and frozen for up to 3 days.¬†If you’re not a fan of kidney beans, use whichever legume you like! This recipe really is forgiving and adaptable! ¬†¬† (more…)

There comes a point in every Indian¬†vegetarian’s life when he or she stops to wonder –¬†¬†Is Paneer the only substitute for meat? The answer is – mostly – Yes. Most of the fabulous¬†recipes which use meat can be suitably modified to create healthy and tasty vegetarian dishes. And instead of the meat component, Paneer is¬†used.

With around 18 grams of protein per 100 grams of Paneer, it is also widely accepted as an excellent protein source for vegetarians. Of course, there are many more faux meat substitutes available in the market these days. And then there is Tofu. But none of these substitutes come close to the flavor and flexibility offered by Paneer РIMO.

I created this burger recipe with leftover paneer. After having enjoyed¬†a¬†rich meal of¬†Paneer Pasanda¬†and Naan the previous day, I was in no mood for another royal meal. I wanted something light, fresh and healthy – and most importantly – I wanted to use up all the leftover paneer and grilled veggies. This burger¬†is as healthy as it is delicious. Sometimes, it is nice to give up the crazy¬†addiction for fast food and cook something light, refreshing and healthy! Keeping up with the promise I made to myself in the beginning of 2015 (to make healthy lifestyle changes), I’ve been consciously opting for ingredients that are healthy. Take Green Lentils (or Green Sprouts, if you may) for example. Packed with proteins and rendering a great texture when cooked, they are wonderful for making patties.

I’m not going to lead you to believe that a healthy lentil and oat burger will be¬†infinitely tastier than your average burger. Health food can only do so much. However, the nuttier flavor kinda grows on you, leaving you satiated for a long time after.

To a regular person, food is a necessity to survive. For me, it is the essence of my soul!!! Food and books are the only two things that nourish my soul like no other experience / thing ever could!

And because I’m madly in love with all the food that I’ve cooked / eaten / yet to cook / yet to eat, I’ve made¬†a list of foods I want¬†to eat before I die. For a food nerd such as myself, that means almost every single dish ever invented by mankind.
