Breadcrumb Pasta (Pasta con il Pangrattato)

Most of my ‘good recipes’ come as a result of leftovers or a situation that demands quick innovative cooking. It was the same with this recipe. I had some leftover breadcrumbs in the fridge; and a pesky brother bugging me to make something tasty, lest Mother feeds him Idli. As much as we all love the South Indian Idli, it is not something that we would eat everyday. Especially when you have Spaghetti at home. And hence, I set about to make my version of the Breadcrumb Pasta. Most of the recipes I found online had a ton of olive oil as the sauce base. I didn’t want that. Hence, I made my own sauce base which turned out to be much more flavorful than a simple olive oil sauce! This is a simple assembly job that takes no more than 15 minutes from start to finish. Spaghetti Aglio e Olio

Did you read the title as Spaghetti Ugly-Oh é Oh-leeo? Then you’re wrong. 😛 It is actually Spaghetti Aaleo-e-leo. Weird huh? I didn’t come up with the name so don’t blame me! 😉 Blame the Italian who came up with Aglio-e-Olio. But bless her/him, for this is one gooooooood dish! All this dish is – is spaghetti with garlic & olive oil sauce. Super simple ingredients, simple flavors.. and so very simple to make! 🙂 (more…)

Pasta Pizza ~ an interesting Italian fusion!

I have never been a big fan of Pasta. And then I made Marinara sauce at home. That entirely changed my opinion of Pasta! Honestly, if I were just boiling some Pasta and mixing with a ready to eat taste-maker provided with the pasta, how would it be good? I devoured a bowl of Pasta with my homemade Marinara sauce. So my statement stands corrected : I don’t like any Pasta. I only like pasta with a good sauce to complement it. 🙂 And then.. an idea struck. I love Pizzas. And now, I’m beginning to love Pasta too. Noodle Frankie

Noodle Frankie is extremely popular in my college. A thin tortilla stuffed with red hot noodles and other spices and rolled like a Burrito makes it an absolute delight to munch on during breaks. Bit by the nostalgia bug, (I graduated in March) I decided to recreate the same roll at home. And I believe I almost succeeded. A bit of tailoring the recipe here and there would give me the perfect homemade Noodle Burrito I’ve been looking for. What you see here is the perfect Noodle Frankie recipe (I hope so!). (more…)
