    Let us all acknowledge the truth about Chinese food. They are simple, delicious and overly adapted to suit each one’s taste.

    I don’t think I’ve ever had “authentic” Chinese food. Growing up in Mumbai, I had access to all kinds Chinese-inspired dishes – all of which hold a special place in my heart. You’d find a Chinese food corner in almost every street in Mumbai. Chinese food to me means veggies stir frying (or rather – sizzling ) in a hot wok and then a delicious sauce (most certainly prepared with a little bit of vinegar and soy sauce) to finish them up, coupled with rice or noodles or one of the many fusion dishes.

    This Vegetable Fried Rice is a quick one-pot meal. It maybe isn’t how the Chinese make it, but it is delicious and easy to make. And this is how it is served in India. Serve it with some Paneer Chilli or Vegetable Manchurian and your Indo-Chinese craving is sorted!   (more…)

    I’m excited to share a dish I’ve long been enamored with – the Sabudana Khichdi.

    Is it THE most healthy dish you could ever make? Probably not. With clarified butter and potatoes and pearl tapioca, you can a good dose of starch and fat (something that healthy food these days seem to lack). However, it is a wholesome dish which would give you everything you need to keep up your energy all day  long.

    And did I mention how easy it is to put this together?

    Not to mention how simply deliciously chewy this Khichdi is?

    The very first “Barley Recipe” on this blog. I really am growing up!

    What I really like about this older me is that I’m starting to appreciate grains other than wheat and rice. There was a time when I pledged my love for rice and couldn’t imagine a healthier substitute to my meals. But this barley vegetable soup left me incredibly surprised. All my initial apprehensions were put to rest when I devoured spoonful after spoonfuls of this filling soup. This soup scores extra points in texture, taste and ease of preparation.

    It is a New Year. And that means making small changes to make it a healthier year.  I almost always make it a point to make some healthy changes… always on a quest to take off a few pounds and live a healthier, more energetic life.     1) Use up all the vegetables in your fridge

    2) Dump them onto a baking sheet and roast for about 30 minutes.

    3) Grind to a soup and flavor with salt and pepper.

    Lo & Behold! You have a healthy and hearty soup ready! I’m an ardent soup drinker. And tomato veggie soup is used to be my favorite…. until I found out this gem. Roasting the veggies in the oven (or the grill) to let it caramelize and develop a smoky flavor just amplifies the flavor of this soup by a 100 notches! So intense is the flavor that you don’t really need much to season it. Just some salt and pepper would give you an aromatic bowl of roasted vegetable soup that you’re guaranteed to love! And serve it with some crusty wholewheat bread to have a wholesome meal in itself!   (more…)
