Adding oats to a regular cookie dough recipe is a great way to add fiber into your otherwise refined sweet treat. Not claiming this is a super healthy dessert, but a if you must have a chocolate chip cookie, might as well go for the one with oats in it, right? These cookies are just as delicious as a regular cookie. Adding oats makes them a little denser and crunchier.

Molten Chocolate Lava Cake is one of my favorite desserts. I thought it would be apt to post something special today, for it is the 4th anniversary of Foodomania. Yep, I officially launched this website on August 1st, 2012. In the past 4 years, I’ve been able to post 500+ recipes with step by step pictures, build a community of food lovers and see my blog grow into a mildly popular food brand. I am grateful to have found a hobby that I’m so passionate about and that lets me be creative.

This recipe for Molten Chocolate Lava Cake is eggless – obviously – and simple. Eggs are what usually provide the molten center to the lava cakes. But with some careful substitutions in the ingredients and baking time and temperature, you can bake yourself an equally good chocolate cake with a molten center. In the recipe, I cheat by adding chocolate chips in the center to give an additional molten center. But because the end product is so tasty, I think a couple shortcuts and cheats are warranted. A thick salted caramel layer over espresso-flavored fudgy chocolate brownies, topped off with ganache makes for one delicious dessert. Made with simple ingredients found in your pantry, you can whip this dessert up in under an hour. You can make the caramel sauce and chocolate ganache ahead of the time, thus saving time.

The texture is soft and fudgy. If you however freeze overnight, the brownie layer becomes like a cookie (which, IMO, is still delicious). If you want it to be soft, then store in the refrigerator.    (more…)

You’re probably wondering what is with the recipe title? I found these pictures in an old hard drive and memories came flooding back! This recipe is the result of one of my earlier attempts at baking. I called these my chocolate buttercream cupcakes back then. In retrospect, naming them “Chocolate cupcakes with chocolate buttercream frosting” would’ve made more sense! 🙂 I made them many moons ago (in 2013, I think!). That explains the very amateurish presentation.

But if you can look past the presentation, what you will see is a wonderfully simple recipe to make a super spongy, soft and delicious cupcake! I will be re-doing the recipe and updating this post with better images. But you can still look at the beautiful texture of these cupcakes, can’t you?    (more…)
