Hi! Are you having a nervous breakdown planning for V-Day? 😉 Nope. Not me. I’m cool as a cucumber! Why wouldn’t I be? Nutella makes the world go round!!! I can’t imagine a world without this beloved chocolate hazelnut paste. It is only fair that I try to use this versatile ingredient in ALL of my desserts, right? *Note to self – use this more often. If you want to jazz things up once in a while and make a different kind of chocolate layer cake, THIS IS THE ONE TO MAKE.

I mean seriously. Nutella in the Cake. Nutella in the Frosting. You can’t really go wrong with this, can you?

And the best part – YOU get to decide how much nutella goes into every element of this gorgeous dessert! So you can be shy and add a couple tablespoons of this liquid gold or you can go all out and empty the whole bottle! You’re still going to have an a-1 layer cake.    (more…)

Sometimes, I just want to quit my job, go some place quiet, and spend the rest of my life reading from my Kindle and eating coconut mousse.

This coconut mousse just transported me to that alternate universe. Good food does that to you sometimes, doesn’t it? 🙂

Coconut is one of those amazing fruits that not only tastes amazing in savory dishes like rice, chutneys etc., but also makes up for a fantastic ingredient to work with in desserts. The subtle burst of flavor in every bite of this mousse will leave you craving for more! As delicious as my airy chocolate mousse (both kinds!) is, I’m always game for trying new flavors. After successfully extrapolating the technique into making scrumptious strawberry and butterscotch mousse(s), I now use a similar method to make this easy coconut mousse. And what’s even cooler is that you could totally use vegan whipped cream, raw sugar and make a vegan dessert – if you so wish.   (more…)

Sometimes, you need to go the extra mile to tell the people you love how much they mean to you. **And with such a cheesy sentence, I make my debut as the romantic-at-heart lady** But seriously, I’m one of those who would starve to feed the people I love. Okay, okay, not starve. But I would happily sacrifice my share of a scrumptious cupcake for others… especially if I am the one who has made it!

Butterscotch is my mom’s favorite flavor. She doesn’t do over-the-top chocolate (I know, crazy right?!). But she’ll happily nibble on any form of butterscotch. This Butterscotch Mousse has been under development for quite sometime now just for her. Once I nailed the basic chocolate mousse recipe, I only had to find out how to make the butterscotch flavor stand out in the recipe. I needn’t have looked far, considering I’ve already made a smashing butterscotch pudding before!

Making butterscotch is very similar to making caramel… actually I think it is the same as making caramel. If you’ve taken care of a few basic points, then the rest of the recipe is simply a breeze to make!   (more…)
