I’d be lying if I said I don’t dream about McAloo Tikki. Come on. Haven’t you? even writing about it makes me smile with a foolish fondness I reserve for very few people / things in my life. This & this being 2 of them.

Every visit to Mcdonald’s has me ordering the same burger over and over again. One of the many reasons I love Indian food is that it just makes ANY dish taste 10 times better! Well, maybe not. Maybe it is just my preference, but there’s no denying the fact that Indian food is incredibly tasty.

The classic American burger was given a desi twist when McDonald’s came to India – to adhere to the Indian taste preferences. And with this customization, McDonald’s drew millions of Indians out of their homes and into its little eateries – to consume one of their many desi burgers.

While I do thank Mcdonald’s for its genius inventions, I’m also starting to understand the science of cooking food. And as much as I love making my life easier by paying a few bucks for a quick fast food, I know that my body will thank me for every bit of morsel I cook at home – with so much care. No kidding! Every once in a while, I come across a truly brilliant recipe that just screams gourmet goodness! These corn cheese balls were such elegant little treats I came across while surfing one of the gazillion cooking shows on television. The idea of a white sauce base to otherwise regular corn balls was really interesting for me to experiment. Stuffing them with a cube of mozzarella was a stroke of genius, I believe. And I have my No-Meatball Sliders to thank that for!

These corn cheese balls are definitely an indulgence – one that you should let yourself have once, maybe twice a year! They go heavy on everything – cheese, oil, seasonings etc. Needless to say, exercise caution while making these beauties since self control is not something you might have while frying them up! However, make them for your next party and watch everyone go ga-ga over these simple deep fried goodie!   (more…)

Roasted Vegetable Soup

1) Use up all the vegetables in your fridge

2) Dump them onto a baking sheet and roast for about 30 minutes.

3) Grind to a soup and flavor with salt and pepper.

Lo & Behold! You have a healthy and hearty soup ready! I’m an ardent soup drinker. And tomato veggie soup is used to be my favorite…. until I found out this gem. Roasting the veggies in the oven (or the grill) to let it caramelize and develop a smoky flavor just amplifies the flavor of this soup by a 100 notches! So intense is the flavor that you don’t really need much to season it. Just some salt and pepper would give you an aromatic bowl of roasted vegetable soup that you’re guaranteed to love! Cookies have never tasted so good!

Stuffed with chocolate, this buttery cookie dough is fabulous enough to eat raw. And once you bake it to perfection, you’ve just got the most interesting cookie in your hands! The texture of the cookie itself is smooth, almost a wonderful intersection between soft and crispy. I don’t know about you, but I need my cookies to be a little crunchy. I don’t get the whole “soft cookie” concept. If I wanted to eat something soft, I would eat a cake or a cupcake or a brownie slice right? But I’ve also tasted extremely crunchy cookies and I don’t like them either. I need a cookie somewhere in between. And these dark fantasy cookies are so far the best textured cookies I’ve baked – only second  to my classic Chocolate Chip cookie! 😉   (more…)
