There is no one way to make Sizzlers. The name of the dish is inspired by how the food is presented to you – hot and sizzling. So you could serve pretty much anything on a hot, sizzling iron plate and call it your own Sizzler. You’ll need a special kind of serving dish known as the Sizzler plate. It comes with a wooden stand and a groove with an iron plate. You cook the food and add it to the hot burning iron plate. And to avoid burning yourself, you place the plate on the wooden stand. If you don’t find this plate or do not want to buy it, you could mimic its functions by placing the food on any iron plate and placing that plate on a wooden board.

25 years ago, my mom kept a recipe journal. In it, she documented culinary experiments unfamiliar to her. Over the years, she got comfortable in the kitchen and developed her own style of cooking. The recipe journal lay forgotten, collecting dust in one of  the store rooms. Miraculously, she has never gotten rid of the journal. She took it with her every time we moved houses.

Fast forward to January 2016. I discovered the journal whilst cleaning my closet and immediately took to reading her recipes. (Side note: Oh, the cleaning session was forgotten). What excited me was that my mom’s energy and enthusiasm about food burned through every page. It felt nice to know that my passion for good food comes from her. Sure, I take the passion to a crazy new level in the family. But basically, what I’m tying to say is, my Ma is a great cook and I’d probably spend a lifetime trying to become as amazing as she is.

Anyway – this recipe journal has an ingenious recipe for Vegetable Manchurian. The minute I saw it, I knew I had to give it a try. Incidentally, veg manchurian has also been one highly requested recipe on this blog. Let us all acknowledge the truth about Chinese food. They are simple, delicious and overly adapted to suit each one’s taste.

I don’t think I’ve ever had “authentic” Chinese food. Growing up in Mumbai, I had access to all kinds Chinese-inspired dishes – all of which hold a special place in my heart. You’d find a Chinese food corner in almost every street in Mumbai. Chinese food to me means veggies stir frying (or rather – sizzling ) in a hot wok and then a delicious sauce (most certainly prepared with a little bit of vinegar and soy sauce) to finish them up, coupled with rice or noodles or one of the many fusion dishes.

This Vegetable Fried Rice is a quick one-pot meal. It maybe isn’t how the Chinese make it, but it is delicious and easy to make. And this is how it is served in India. Serve it with some Paneer Chilli or Vegetable Manchurian and your Indo-Chinese craving is sorted!   (more…)

Indians LOVE their interpretation of Chinese cuisine.

I’ve said it so many times now, that I’m starting to sound like a broken record.

But it is true! No other foreign cuisine has had influence on Indians the way Chinese has! And these vegetable spring rolls are just another great addition to our “Indo-Chinese dishes”. I love a good spring roll, especially if it is homemade! You can make your spring rolls at home – and you don’t even have to deep fry them! It is not the most easiest recipe, I admit. But they taste fantastic and are worth making once in a while…And they taste amazing with schezwan sauce!!! (more…)
