    A good paneer recipe can make my heart skip a beat. Among most Indian-food lovers – especially the vegetarian ones – Paneer is revered because it is the one ingredients that can made into whatever their heart desires… Kind of like an avocado. 😉

    I experiment with Paneer quite often. This is my absolute favorite recipe for a Paneer Tikka Masala. It is classic, simple, zingy, flavorful and oh-so-spicy! This is the kind of recipe that Indian food dreams are made of! Admittedly, this recipe does involve a few steps that may not be an impatient guy’s cuppa tea. However, the recipe steps are quite easy and absolutely doable by any home-cook!

    Indian restaurants make big bucks selling paneer tikka masala to Indian food enthusiasts. While a good curry in the restaurant is definitely worth the buck, you’d be better off if and when you make it at home – knowing fully well what goes into the gravy and well in control of the spices, salt and oil.     I have to admit, radish isn’t one of my most loved vegetables.

    However, I do enjoy radish in a few forms, this paratha being one of them. Mooli is the Hindi name for Radish and this mooli paratha is just a radish flavored tortilla. Simple, spicy and delicious!

    Commonly served for breakfasts in the lands of Punjab, I’ve heard. But that hasn’t stopped any of us from enjoying these hot and soft flat-breads at varying times of the day. This recipe is the epitome of the saying – simplicity is profound. Radish, flour and some common spices found in an Indian’s pantry thrown together and voila!     When was the last time you went a step ahead to make your food look sexy?

    Of course, using fresh ingredients and adding a bunch of color to the dish does make it beautiful. But I am talking about a dish that will make the eater’s eyes pop out and go “Yaauuzaa!!”.

    Enter the best discovery of mankind – A sizzler plate – a humble Iron plate with a wooden stand to rest. I combined the entire dish onto a sizzler plate and served it for the extra oomph. Of course, you could just serve it on a regular plate, minus the sizzle. But trust me, once you make this, it would be hard to go back to the regular old Pulao dish! 🙂

    There are a few elements to this dish – The Pulao itself, the gravy, some crunchy fries and croutons. And that is just what I put together in 30 minutes. If you have the time, please, feel free to add dimensions to this dish. Some patties, roasted veggies, noodles etc. would be great too.     I am a rice-a-holic. I eat some kind of a rice dish for breakfast, lunch and dinner! Be it some soft rice idlis to kick of the day or a simple curd rice to end the day, rice is a major component of my diet. I do have a post on how I cook my rice in the pressure cooker. More often than not, it is the tool we use to cook everything from rice, potatoes and even beans!

    However, once in a while, I like to put my Microwave to good use. And whenever I do, I like to cook Pulao in it! Only because I can! 😉 And because the texture of the rice is fluffy and wonderful when cooked in the microwave!

    It is not much different than making it in a pressure cooker or a pan. If you own nothing but a microwave, then you would love this recipe since you’re essentially making everything in one microwave pan.   (more…)
