Oreo cookies are one of my favorite things to use in baking. I believe the dark chocolate cookies add a nice dimension to the end product. In this recipe for eggless oreo blondies, I combine Oreo cookies with a classic recipe for butterscotch blondies. People are often intimidated by the idea of baking – let alone baking something offbeat. Let me assure you, baking is not terribly difficult, and the appreciation and satisfaction it brings are disproportionately high.

Baking – to me – is a wonderful escapade into the lands of warm and cozy goodness. My philosophy is to do things not out of sheer necessity but because they make me feel good. I love to bake. And when I am fiddling about in the kitchen, I often convince myself that there are brownies or cookies that need to be baked – stat!

Take these eggless chocolate chip cookie brownies for example. Having perfected the recipes for classic chocolate chip cookies and brownies, the next sensible thing to do is to try to bake the two of them together – right? Maybe not. What with both calling for different baking temperatures and timings, this attempt would have been disastrous. But surprisingly, a few adjustments here and there and you can successfully bake brownies on cookie crust at the same time.

The soft and fudgy texture of the brownies combined with the crunchy texture of the cookies make this one interesting dessert. You get the best of both – cookies + brownies – in one bite. And that to me is a keeper!     (more…)

This is like your everyday quintessential vanilla cookies recipe.

The only difference is that is one is better.

Butterscotch flavor runs through every bite, while the crushed graham crackers give an additional crunch to the cookie. And marshmallows and chocolate chunks take it up a notch. Who doesn’t like bite sized pieces of s’more-y goodness? You could skip the marshmallow and chocolate topping to make butterscotch cookies too. But why would you? Some recipes are borrowed, some passed down and some – like the recipe for these no-knead garlic rolls – are invented by my over imaginative brain.

There is a lot of thinking about food going on in my head all the time. I’ve been branded an obsessive foodie by many. And why should I be embarrassed about it? Yes – I may not seem normal to my next door neighbor; who cannot fathom why my eyes pop out when I smell beautiful onions caramelizing or when I see mint leaves growing right outside in the garden like there’s no tomorrow! The truth is – my brain goes into a recipe overdrive every time I see or get my hands on fresh ingredients.

One day, I got myself some fresh, subtly pungent garlic cloves and plucked green chilies from my chili pot… and got to thinking about all the classic possibilities I could make with 2 most commonly used ingredients. I had made numerous variations of the garlic bread before. The one thing all of them involved was – KNEADING. While there isn’t anything wrong with getting some elbow grease, wouldn’t we all like to do away with the kneading a few times? After a few different attempts, I finally made some super soft rolls with a dough that barely involved any kneading!
