I’m sharing a basic vanilla ice cream recipe with you today.

There are different ways of making ice cream. With eggs, without eggs, with cream, half and half or milk, with ice cream machine or without it, French style, American style and so on…! Making ice cream is an art that doesn’t take very long to master. Once you get the basics right, it is a matter of waiting and whipping – again and again and AGAIN!

And in my true style, I have perfected the “eggless” ice cream recipe for y’all. And yes, I make mine without an ice cream machine. Definitely time consuming, but so worth it! Cookies have never tasted so good!

Stuffed with chocolate, this buttery cookie dough is fabulous enough to eat raw. And once you bake it to perfection, you’ve just got the most interesting cookie in your hands! The texture of the cookie itself is smooth, almost a wonderful intersection between soft and crispy. I don’t know about you, but I need my cookies to be a little crunchy. I don’t get the whole “soft cookie” concept. If I wanted to eat something soft, I would eat a cake or a cupcake or a brownie slice right? But I’ve also tasted extremely crunchy cookies and I don’t like them either. I need a cookie somewhere in between. And these dark fantasy cookies are so far the best textured cookies I’ve baked – only second  to my classic Chocolate Chip cookie! 😉   (more…)

While using powdered sugar would have given me a smoother finish, the brown sugar gave me rustic looking cookies that honestly – was better than the smooth cookies! Add to that the caramelization of brown sugar and the punch of mocha flavor running in the background, you’ve got yourself one huge hit!

I find myself appreciating mocha and dark chocolate flavors more and more these days. Hence, I’ve amped up the amounts of cocoa and espresso powders in the recipe. But if you would rather have a simple chocolate cookie, feel free to adjust the quantities in the recipe.  (more…)
