Holi, known as the festival of colors is celebrated all over India and Nepal. This festival announces the arrival of spring – the season of hope and new beginnings. During Holi, people get together and rejoice with colors, foods, and drinks to express happiness and symbolically celebrate life with the victory of good over evil and spread the message of love, unity, and peace.

It is worth visiting India during this time to witness and experience the exuberance of this festival. Food is, as always, a very significant aspect of this festival. Rasmalai – a dessert that is notoriously technical and time consuming, yet loved by one and all. It is nothing but soft, curdled milk cheese cooked in sugar syrup and dunked in a deliciously sweet saffron flavored milk. What’s not to love? Well, if you see the length of the recipe, you might just say – THAT.

But I think if you try it out a couple of times & get used to it, it will seem like a breeze! After all, Croissants take all day to make and we don’t say no to them, do we? 😉 This is a sweet treat prepared on special occassions and festivals. Although it is pretty easy to just buy Rasmalai from any Indian dessert store, I truly believe the homemade version is better – since we use the best products to actually make it. I am aware of how funny these Samosas look. I am even aware of how they are supposed to look. So don’t rush to write mean comments saying how silly they look until you just hear me out, okay?

A Punjabi Samosa is one of the most popular deep fried delicacies in India. In fact, if you are an Indian cuisine enthusiast, I’m sure you’ve heard of a Samosa. Making samosas is an art that requires some patience and skill – both of which I seem to lack. Paal Payasam

Which brings me to the word “paal payasam“. For all my non-south-Indian friends out there, it loosely translates to “milk sweet“. But that doesn’t really give out much information about the dessert itself because off the top of my head – I could give you 10 other sweets made with milk. (Hellllooo… remember Rabdiiiii??)
