Thick and fudgy brownies layered with a sweet mint frosting and a glossy chocolate ganache.

This is what a “grown-up” dessert must look like. Mint wasn’t really my thing for a very long time. Let’s face it, it is intense, sometimes pungent and not really… chocolate. But my tastes are maturing as I grow up. Mint is definitely one of those grown up flavors that I’ve grown to love.

Mint and Chocolate is a classic combination. You’ll find variations of this recipe all over the internet. But this is maybe the only “eggless” mint chocolate brownies’ recipe you’ll find. And I promise, you will love these!

Navratri Prasad Recipes by Foodomania.com

(Reposted from 2014!)

Navratri translates to 9 Nights. 🙂 The festival of Navaratri / Navratri lasts for 9 Nights and 10 Days, during which time 9 versions of Shakti (or the Goddess) are worshiped.  As all Indian festivals are, this period too is celebrated with great pomp and show! Traditions vary from region to region, but largely – people follow a simple, sattvic diet, worship different Goddesses and share the “Prasad” (which is the food offered to the Goddess) with their friends and family. You can read a lot more about this festival here.

Food during Navratri is simple and light on the stomach (unlike other festivals where its all about deep frying!! 😀 ). Meat products are usually avoided during this period. Most people confine their diets to fruits and fruit juices and eating just once during the day. While South Indians avoid onion, garlic from their diets, North Indians are known to be more strict with their diet and allow only certain types of flours and grains to be consumed during the period. It would be difficult to exactly tell you what is followed, since traditions tend to vary so much. However, I’ve tried to put together a list of Navratri prasad recipes commonly prepared in various households.

Hershey’s Kisses have got to be the cutest candies ever invented. Not only do they taste amazing (I mean, hello? That burst of chocolate in your mouth? Yauza!), but they also effortlessly add a certain cuteness to an dessert they are a part of. For lazy people like me, this is great because we don’t have to spend hours stressing over dessert-decorations!

Inspired from these intensely-chocolaty candies, I decided to make some cupcakes that will knock your socks off! With a basic chocolate cupcake base, I take it up a notch by stuffing each cupcake with a Hershey’s kiss. And then I frost them with an amazing frosting I discovered accidentally. Yep – have you tried combining buttercream and marshmallows and chocolate? You’ve got to do it right now – if you haven’t already!

The best part is that you really don’t need to stress yourself too much. You’re going to enjoy making these cupcakes – just as much as you’re going to enjoy devouring them!    (more…)
