No kidding! Every once in a while, I come across a truly brilliant recipe that just screams gourmet goodness! These corn cheese balls were such elegant little treats I came across while surfing one of the gazillion cooking shows on television. The idea of a white sauce base to otherwise regular corn balls was really interesting for me to experiment. Stuffing them with a cube of mozzarella was a stroke of genius, I believe. And I have my No-Meatball Sliders to thank that for!

These corn cheese balls are definitely an indulgence – one that you should let yourself have once, maybe twice a year! They go heavy on everything – cheese, oil, seasonings etc. Needless to say, exercise caution while making these beauties since self control is not something you might have while frying them up! Ganesh Chaturthi is a Hindu festival celebrated on the birthday of Lord Ganesha, son of Lord Shiva & Goddess Parvati. Ganesha is widely worshiped as the god of wisdom, prosperity and good fortune and is traditionally invoked at the beginning of any new venture! This festival is celebrated in all parts of India, and is especially prominent in Maharashtra. This festival usually falls between August 18th to September 22nd and lasts for 11-13 days. Food, as always, is an important part of the festival.Various versions of Modaks (also known as Kozhakattai / Kadubu / Modagam / Sughiyan) are prepared as offerings to the Lord. It is a kind of sweet dumpling and varies from region to region. A kind of savory mixture is also commonly prepared in households.

Let me introduce y’all to this gobsmackingly delicious, healthy snack time treat! These are my spicy oven roasted chickpeas.

My obsession with beans is well known in my neighborhood. So much so that many a time, bean curries are sent across just for me to taste them! I’m not kidding! Kidney Beans and Chickpeas are my 2 all time favorite beans. That they come packed with goodness of proteins is just an additional benefit! I’d be eating them with or without the promise of proteins! 😉

One dish that I am incredibly, innnncredibly proud of is my Paneer Chilli. For those uninitiated, it is an Indian adaptation of Chinese flavors in Cottage Cheese cubes.

If you thought crispy cottage cheese cubes tasted amazing in an ethnic Chinese inspired sauce, wait until you have THIS amazingly simple combination of potatoes with a Chinese sauce!

So simple. So cheap. So delicious.

Of course, the authenticity of this dish is questionable. I don’t even know if Chinese people eat their potatoes this way! 🙂 All I know is that Indians – with their undying love for Indian version of Chinese food, absolutely enjoy these Chilly Potatoes! (more…)
