Indians LOVE their interpretation of Chinese cuisine.

I’ve said it so many times now, that I’m starting to sound like a broken record.

But it is true! No other foreign cuisine has had influence on Indians the way Chinese has! And these vegetable spring rolls are just another great addition to our “Indo-Chinese dishes”. I love a good spring roll, especially if it is homemade! You can make your spring rolls at home – and you don’t even have to deep fry them! It is not the most easiest recipe, I admit. Welcome to the world of Mozzarella!

If you’re anything like me, my brother and half the world’s population, you dig mozzarella…. and with good reason too! The stringy, stretchy, gooey texture rendered by mozzarella (especially the fresh kind) is an experience not to be missed.

Yes, yes, I’ll get to the tomato and basil too now. No kidding! Every once in a while, I come across a truly brilliant recipe that just screams gourmet goodness! These corn cheese balls were such elegant little treats I came across while surfing one of the gazillion cooking shows on television. The idea of a white sauce base to otherwise regular corn balls was really interesting for me to experiment. Stuffing them with a cube of mozzarella was a stroke of genius, I believe. And I have my No-Meatball Sliders to thank that for!

These corn cheese balls are definitely an indulgence – one that you should let yourself have once, maybe twice a year! They go heavy on everything – cheese, oil, seasonings etc. Needless to say, exercise caution while making these beauties since self control is not something you might have while frying them up! However, make them for your next party and watch everyone go ga-ga over these simple deep fried goodie!   (more…)

Ganesh Chaturthi is a Hindu festival celebrated on the birthday of Lord Ganesha, son of Lord Shiva & Goddess Parvati. Ganesha is widely worshiped as the god of wisdom, prosperity and good fortune and is traditionally invoked at the beginning of any new venture! This festival is celebrated in all parts of India, and is especially prominent in Maharashtra. This festival usually falls between August 18th to September 22nd and lasts for 11-13 days. During the festival, idols of Ganesha are hosted in various homes and delicious food, known as Prasaad,  is offered to the Lord. You can read more about the festival here.

Food, as always, is an important part of the festival.Various versions of Modaks (also known as Kozhakattai / Kadubu / Modagam / Sughiyan) are prepared as offerings to the Lord. It is a kind of sweet dumpling and varies from region to region. A kind of savory mixture is also commonly prepared in households.
