As long as we are talking about bread baking, you must know that it does not get any easier than these soft petit pains au lait rolls.

These french milk bread rolls are pleasantly soft and spongy and an absolute delight to devour. Traditionally studded with pearl sugar, these rolls are meant to be had at breakfast or with chilled milk. However, if your taste buds call for something spicy, you can easy swap out the sugar for your favorite choice of herbs and spices, while retaining the dough and the process of shaping the rolls. The typical “tooth mark” on these rolls give them a differently gorgeous look.

Although you can rely on all purpose flour to give you a spongy texture that we all love, it is recommended that you try to get your hands on some strong bread flour. And if you want an alternative, vital wheat gluten can help with the gluten content in the dough, thus making it elastic and spongy. Then again – if you are just starting out – don’t even bother. I used neither bread flour nor VWG, and I still found these rolls to be great.   (more…)

Some recipes are borrowed, some passed down and some – like the recipe for these no-knead garlic rolls – are invented by my over imaginative brain.

There is a lot of thinking about food going on in my head all the time. I’ve been branded an obsessive foodie by many. And why should I be embarrassed about it? Yes – I may not seem normal to my next door neighbor; who cannot fathom why my eyes pop out when I smell beautiful onions caramelizing or when I see mint leaves growing right outside in the garden like there’s no tomorrow! The truth is – my brain goes into a recipe overdrive every time I see or get my hands on fresh ingredients.

One day, I got myself some fresh, subtly pungent garlic cloves and plucked green chilies from my chili pot… and got to thinking about all the classic possibilities I could make with 2 most commonly used ingredients. I had made numerous variations of the garlic bread before. The one thing all of them involved was – KNEADING. While there isn’t anything wrong with getting some elbow grease, wouldn’t we all like to do away with the kneading a few times? After a few different attempts, I finally made some super soft rolls with a dough that barely involved any kneading!

There comes a point in every Indian vegetarian’s life when he or she stops to wonder –  Is Paneer the only substitute for meat? The answer is – mostly – Yes. Most of the fabulous recipes which use meat can be suitably modified to create healthy and tasty vegetarian dishes. And instead of the meat component, Paneer is used.

With around 18 grams of protein per 100 grams of Paneer, it is also widely accepted as an excellent protein source for vegetarians. Of course, there are many more faux meat substitutes available in the market these days. And then there is Tofu. But none of these substitutes come close to the flavor and flexibility offered by Paneer – IMO.

I created this burger recipe with leftover paneer. After having enjoyed a rich meal of Paneer Pasanda and Naan the previous day, I was in no mood for another royal meal. I wanted something light, fresh and healthy – and most importantly – I wanted to use up all the leftover paneer and grilled veggies. This burger is as healthy as it is delicious.
