Rajma Masala

This Rajma Masala is an Indian version of the Bean Chilli – Soft kidney beans cooked with exotic spices in an onion & tomato based gravy.

Kidney beans are referred to as Rajma in India. And the spicy gravy based dish that is commonly prepared is known as Rajma Masala. It is usually served with Rice or RotiRajma Chawal, a combination of the rajma masala and rice is one of the most popular meals served in many parts of Northern India.

Once a week, I get my dose of proteins from kidney beans. I like them in almost any form. Boiled, made into a patties, tossed with a salad dressing or cooked into this deliciously spicy curry. I like to serve Rajma with Jeera Rice. In my opinion, the mildly fragrant Basmati rice paired with a delicious bean curry has got to be the best meal ever.

A good paneer recipe can make my heart skip a beat. Among most Indian-food lovers – especially the vegetarian ones – Paneer is revered because it is the one ingredients that can made into whatever their heart desires… Kind of like an avocado. 😉

I experiment with Paneer quite often. This is my absolute favorite recipe for a Paneer Tikka Masala. It is classic, simple, zingy, flavorful and oh-so-spicy! This is the kind of recipe that Indian food dreams are made of! Admittedly, this recipe does involve a few steps that may not be an impatient guy’s cuppa tea. However, the recipe steps are quite easy and absolutely doable by any home-cook!

Indian restaurants make big bucks selling paneer tikka masala to Indian food enthusiasts. While a good curry in the restaurant is definitely worth the buck, you’d be better off if and when you make it at home – knowing fully well what goes into the gravy and well in control of the spices, salt and oil. Potatoes are humble vegetables. Inexpensive and incredibly flexible, they make for some of the best savory food creations.

Take these baked potato wedges for example. These spicy, crispy, roasted potatoes are all you need out of comfort food. And because they’re baked, you’re doing yourself a favor by cutting out all the fat. Still not the healthiest dish around, I’ll admit. But when you go high on starch, you could benefit from reducing the fat at the very least, yeah?

You can use your favorite combination of spices to customize these wedges the way you want. In fact, I always like experimenting with the seasoning, just so that I could enjoy the variety. Chilly Potatoes

If you want to get somebody excited about Chilly Potatoes, tell them it is French Fries in a delicious Chinese Sauce base! Easy to prepare, these Chilli Potatoes is one dish that you can enjoy along with some Chinese noodles or rice or by itself as well!

One dish that I am incredibly, innnncredibly proud of is my Paneer Chilli. For those uninitiated, it is an Indian adaptation of Chinese flavors in Cottage Cheese cubes.

If you thought crispy cottage cheese cubes tasted amazing in an ethnic Chinese inspired sauce, wait until you have THIS amazingly simple combination of potatoes with a Chinese sauce!

So simple. So cheap. So delicious.

Of course, the authenticity of this dish is questionable. I don’t even know if Chinese people eat their potatoes this way! 🙂 All I know is that Indians – with their undying love for Indian version of Chinese food, absolutely enjoy these Chilly Potatoes! (more…)
