If you are an Indian with a Jain friend, you’ve probably wondered how they manage to bring out such fantastic flavors in their curries… given that they don’t use onions or garlic… or potatoes.. or any root vegetable, for that matter! Clearly, their lifestyle seems intimidating to a regular vegetarian like me (who enjoys her garlic!).

However, it is this lifestyle – I believe – that keeps them so healthy and disciplined. A lot of their principles revolve around a healthy lifestyle. Anyhoo.. I’m not here to lecture on how to live like a Jain – since I could never do it myself! 🙂

Bhindi Masala

I have 2 favorite methods of cooking Bhindi (okra) – The south Indian stir fry way… and more recently, the Maharashtrian bhindi masala way with extra dose of Goda Masala!

Ever since I discovered the secret to Goda, I’ve been using it generously in all my stir fried veggie dishes. It’s a great spice mixture – even better than garam masala in some cases. I believe this is (almost) how Maharashtrians make their Bhindi masala. (more…)

Even thinking about this simplicity makes me drool. It is such a perfect accompaniment to sooooo many of my favorite South Indian dishes! Without this chutney, I’m pretty sure those dishes would taste ordinary. This is what makes them extraordinary.

With the slight sourness from the tomato and pungency from the onions combined with classic South Indian flavorings, this onion tomato chutney; or as we all call it – the Red Chutney is a really useful condiment to make and store in your refrigerator!
