Here is a quick, fresh summer salad to spruce up your day! This sweet and spicy mango jalapeno salad is everything you’d want in a light, healthy salad – it is quick, easy, has simple flavors and tastes delicious.

Add some grilled chicken or cooked beans to this and you’ve got a wholesome meal.  In fact, it is so versatile that it serves as an excellent topping on burgers, nachos and pizzas too (of course, after cooking).

Ask any Indian, and he or she would tell you that one of the greatest pleasures in life is going for a quick pani puri snack. It is one of the most popular street foods. Every region has its own variation of the dish. Pani Puris are known as “Gol gappas” in Northern India and as “Poochkas” in West Bengal.

I spent 4 years of college + grad life stuffing myself with these sweet and spicy delights. Literally. I ate this every single day. In fact, I was such a regular customer that I had become friends with many street vendors who recognized me and gave me extra pooris.. just because!

Now, (this is my opinion and you are welcome to disagree) the Pani Puri you eat from a street vendor is better than a homemade version or from proper restaurants. There is something joyful about eating from these little carts on the streets that you just cannot replicate in a hotel setting. If you’re ever in India, I do urge you to find a street vendor to enjoy these delicacies.

But for those who do not have the luxury of stepping out of their homes to find a street vendor selling pani puris or for those who would rather have hygienic homemade pani puri, I present to you a detailed recipe for t he same. Kunukku may possibly be an all time favorite “tiffin” tea time snack in my household.

I have fond memories of my paternal grandma making this exquisite snack abound. I’d always watch her make kunukku after kunukku with patience that our current generation seems to lack. She’d freshly grind the dry chilli, followed by wet parboiled rice and soaked lentils. She had an innate sense of how smooth or coarse the batter should be and she’d always use the right amount of spices and salt to make the batter taste perfect. With utmost precision, she’d drop equal portions of the batter into scalding hot oil, making the perfect sized kunukku pieces.

The art of making kunukku is easy to master. It requires a little practice, for making equal sized balls with a sticky batter like this one isn’t always easy.  But with easy alternatives such as spoons or ice cream scoops, you can make your own perfect little kunukku pieces.

People are often intimidated by the idea of baking – let alone baking something offbeat. Let me assure you, baking is not terribly difficult, and the appreciation and satisfaction it brings are disproportionately high.

Baking – to me – is a wonderful escapade into the lands of warm and cozy goodness. My philosophy is to do things not out of sheer necessity but because they make me feel good. I love to bake. And when I am fiddling about in the kitchen, I often convince myself that there are brownies or cookies that need to be baked – stat!

Take these eggless chocolate chip cookie brownies for example. Having perfected the recipes for classic chocolate chip cookies and brownies, the next sensible thing to do is to try to bake the two of them together – right? Maybe not. What with both calling for different baking temperatures and timings, this attempt would have been disastrous. But surprisingly, a few adjustments here and there and you can successfully bake brownies on cookie crust at the same time.

The soft and fudgy texture of the brownies combined with the crunchy texture of the cookies make this one interesting dessert. You get the best of both – cookies + brownies – in one bite. And that to me is a keeper!     (more…)
