I’ve been kind of obsessed with Mexican cuisine a lot these days! Bean burgers, pico de gallo, stuffed peppers, vegetarian chilli, nachos.. you name it and I’ve been cooking + eating all of them! You can expect a lot of Mexican food coming up on this blog soon! ūüôā

This veggie bean burger was one of my earliest attempts at making vegetarian Mexican food. It can be as healthy as you want it to be. If you have access to canned beans, this recipe will take you 30 minutes or less to make. But if you cook your beans, then I do suggest you plan¬†and cook the beans ahead of time. The patties mixture can also be made and frozen for up to 3 days.¬†If you’re not a fan of kidney beans, use whichever legume you like! This recipe really is forgiving and adaptable! ¬†¬† (more…)

People are often intimidated by the idea of baking Рlet alone baking something offbeat. Let me assure you, baking is not terribly difficult, and the appreciation and satisfaction it brings are disproportionately high.

Baking Рto me Рis a wonderful escapade into the lands of warm and cozy goodness. My philosophy is to do things not out of sheer necessity but because they make me feel good. I love to bake. And when I am fiddling about in the kitchen, I often convince myself that there are brownies or cookies that need to be baked Рstat!

Take these eggless chocolate chip cookie brownies for example. Having perfected the recipes for classic chocolate chip cookies and brownies, the next sensible thing to do is to try to bake the two of them together Рright? Maybe not. What with both calling for different baking temperatures and timings, this attempt would have been disastrous. But surprisingly, a few adjustments here and there and you can successfully bake brownies on cookie crust at the same time.

The soft and fudgy texture of the brownies combined with the crunchy texture of the cookies make this one interesting dessert. You get the best of both – cookies + brownies – in one bite. And that to me is a keeper! ¬† ¬† (more…)

As long as we are talking about bread baking, you must know that it does not get any easier than these soft petit pains au lait rolls.

These french milk bread rolls are pleasantly soft and spongy and an absolute delight to devour. Traditionally studded with pearl sugar, these rolls are meant to be had at breakfast or with chilled milk. However, if your taste buds call for something spicy, you can easy swap out the sugar for your favorite choice of herbs and spices, while retaining the dough and the process of shaping the rolls.¬†The typical “tooth mark” on these rolls¬†give them a differently gorgeous look.

Although you can rely on all purpose flour to give you a spongy texture that we all love, it is recommended that you try to get your hands on some strong bread flour. And if you want an alternative, vital wheat gluten can help with the gluten content in the dough, thus making it elastic and spongy. Then again – if you are just starting out – don’t even bother. I used neither bread flour nor VWG, and I still found these rolls to be great. ¬† (more…)
