Milagai Podi is a spice blend made with lentils and chilli. It is mixed with oil and eaten as a condiment to various Indian dishes… typically south Indian dishes such as Idli, Dosa and more. It is even used as a dip to be eaten with chips by some people.

Milagai (or as some people like to call it Molaga) is a Tamil word for Chili. This literally translates to chili powder. But it isn’t exactly just powdered chili. There are blends of lentils and seeds to give it additional flavor. You can make this and store it for a long time. It comes in very handly when you’re short of time and cannot make chutneys as side dishes. Just add a splash of sesame oil (or coconut oil or water) to some of the powder and you have a fabulous dip ready!

Stopping by mid week to post a supremely easy breakfast treat – the Pancake muffins!

Pancakes are by far the easiest recipe I have ever come across. But you do have to babysit each pancake, flipping them when they’re done and making more. When you are the one making them, you almost always  end up with leftovers or cold pancakes. With these pancakes in muffin tins, you can have the best of both worlds – taste of a pancake in a cupcake form without having to sit over a griddle flipping pancakes.

These adorable little breakfast-on-the-go muffins can be baked in regular sized cupcake molds as well; but I do think the mini versions make for better looking muffins. The batter is as easy as mixing 8-9 ingredients together, in no specific order. You may or may not add chocolate chips or blueberries on top of the batter for extra flavor. Just pop them into an oven and let them bake into perfect little pancake muffins!

There comes a point in every Indian vegetarian’s life when he or she stops to wonder –  Is Paneer the only substitute for meat? The answer is – mostly – Yes. Most of the fabulous recipes which use meat can be suitably modified to create healthy and tasty vegetarian dishes. And instead of the meat component, Paneer is used.

With around 18 grams of protein per 100 grams of Paneer, it is also widely accepted as an excellent protein source for vegetarians. Of course, there are many more faux meat substitutes available in the market these days. And then there is Tofu. But none of these substitutes come close to the flavor and flexibility offered by Paneer – IMO.

I created this burger recipe with leftover paneer. After having enjoyed a rich meal of Paneer Pasanda and Naan the previous day, I was in no mood for another royal meal. I wanted something light, fresh and healthy – and most importantly – I wanted to use up all the leftover paneer and grilled veggies. This burger is as healthy as it is delicious. Here’s a bread fresh from the Tandoor to tickle your taste-buds! Kulchas are easier to make than Naan; but also give you an almost similar texture – spongy, chewy and soft! Requiring no yeast, these flour tortillas (or breads.. whatever you want to call them) are super easy to make and taste delicious with any side dish of your choice.

Usually cooked in a Tandoor, these breads have a smoky taste that is not hard to replicate at home. Using an iron griddle to partially cook the Kulchas and finishing them off in direct flame, you can get an almost similar texture and taste at home. And they are really quick to cook too!

The next time you decide to have an Indian feast, go ahead and make these Kulchas – with or without the butter. They are perfect vehicles to scoop up the many delicacies that Indian cuisine boasts of!    (more…)
