    Add some grilled chicken or cooked beans to this and you’ve got a wholesome meal.  In fact, it is so versatile that it serves as an excellent topping on burgers, nachos and pizzas too (of course, after cooking).

    With Cinco de Mayo round the corner, lots of Mexican recipes are popping up on the internet. While nothing beats my love for Indian food, I do enjoy the fresh flavors of the Mexican cuisine too.

    Pico de Gallo is one of the easiest salads you’ll ever make. Simply put, it is an onion and tomato salad spruced up with lemon, garlic and coriander. It tastes great as is, or with tortilla chips (or any chips, to be honest!), on tacos, burgers, bruschetta, enchilada, quesadillas, nachos, fajitas etc.

    Don’t think of this as a strict “recipe” you have to follow. Play with the flavors to make something suitable to your taste.    (more…)

    Sometimes, it is nice to give up the crazy addiction for fast food and cook something light, refreshing and healthy! Keeping up with the promise I made to myself in the beginning of 2015 (to make healthy lifestyle changes), I’ve been consciously opting for ingredients that are healthy. Take Green Lentils (or Green Sprouts, if you may) for example. Packed with proteins and rendering a great texture when cooked, they are wonderful for making patties.

    I’m not going to lead you to believe that a healthy lentil and oat burger will be infinitely tastier than your average burger. Health food can only do so much. However, the nuttier flavor kinda grows on you, leaving you satiated for a long time after.

    A good paneer recipe can make my heart skip a beat. Among most Indian-food lovers – especially the vegetarian ones – Paneer is revered because it is the one ingredients that can made into whatever their heart desires… Kind of like an avocado. 😉

    I experiment with Paneer quite often. This is my absolute favorite recipe for a Paneer Tikka Masala. It is classic, simple, zingy, flavorful and oh-so-spicy! This is the kind of recipe that Indian food dreams are made of! Admittedly, this recipe does involve a few steps that may not be an impatient guy’s cuppa tea. However, the recipe steps are quite easy and absolutely doable by any home-cook!

    Indian restaurants make big bucks selling paneer tikka masala to Indian food enthusiasts. While a good curry in the restaurant is definitely worth the buck, you’d be better off if and when you make it at home – knowing fully well what goes into the gravy and well in control of the spices, salt and oil. And of course, a homemade dish is always going to leave you feeling satisfied. So without further ado, here’s how I like to make Paneer Tikka Masala.  (more…)
