These quinoa bites have turned out to be the new mini-comfort slash healthy food I’m craving these days. I’ve got a thing for appetizers. And the mini-er they get, the cuter they look and the less guilty I feel for the never ending indulgence. 🙂

But with this simple recipe for crispy quinoa bites, I’m combining my love for mini version of food with a healthier way of cooking and a new ingredient that I’ve never really cooked with before!

The Verdict – Well, quinoa is an exotic ingredient in India. Unlike a potato, it does not  just blend into the mixture adopting whatever flavor you give it. Quinoa lends its own flavors to whatever you are cooking. And to truly like and appreciate quinoa, it is necessary to nail the texture. If you’ve never tasted quinoa before, you might have to get used to the nuttier flavor it provides. And these quinoa bites can definitely be the first thing you try with quinoa. Summers in India are brutal. But what can help beat the intense summer heat is this delicious drink made with green raw mangoes, sweetener and spices. Known to have properties that prevent heat exhaustion and heat stroke, Aam Panna also quenches thirst and prevents the excessive loss of sodium chloride and iron during summer due to excessive sweating.

There are a few different ways in which you can make the drink. As always, you should decide how you’d like the drink to be spiced. You can use sugar, but jaggery is a healthier substitute. The traditional deep dried Samosa is and will always be the best way to make this snack. However, one has to look for better alternatives if he/she plans to eat this often.

They take a little bit longer to get ready than the regular version; but if you could avoid all the fat and yet retain all the flavor – wouldn’t you wanna make them this way all the time?  Baked Samosas are almost exactly same as deep fried Samosas. The only difference is in the method of preparation. You could use your favorite filling for these or make the typical Samosa filling we all love. Similarly, you could make them in the conical samosa shape – or do what i did – roll them into bite sized pieces and call them Samosa bites! 🙂 They all taste the same – no matter what shape you roll them into!   (more…)
