I racked my brains for a smart introduction to this Pull-Apart Bread Loaf. And then I thought – why bother? One look at the pictures and you wouldn’t care what I thought about this recipe because you’ve already fallen in love with it!

I’m right, right? I didn’t expect to end up with such an amazingly spongy and delicious bread loaf that came apart so easily. It is fun eating a pull-apart bread. You don’t have to cut it up. Each piece tears off easily – and hence the name.

It was quite difficult to resist eating this bread long enough to get these photographs. As is with every bread recipe, this one too calls for yeast and some arm strength to knead an elastic dough. Kneading is the secret to that beautiful spongy texture we all know and love. Once you realize just how easy it is to put together the rest of the recipe, you will want to make it for every get-together. Let’s face it – this may be one of the fanciest looking bread-based appetizers / snack you can serve.

And of course, the variations you can make with this one are one too many. You could literally used any pesto / thick spread and make a different flavored pull-apart bread every single time. I’d just stay away from saucy condiments for the filling.. cuz it will be difficult to stack up the dough onto the pan. Other than than – go have fun with this recipe! 🙂

Ingredients
For the Dough
  • 2 cups All Purpose Flour
  • ½ teaspoon Salt (adjust to taste)
  • 2 teaspoons Instant Yeast
  • 1 teaspoon Sugar
  • ¼ cup plain Yogurt
  • 4 Tablespoons Melted Butter or Vegetable Oil
  • ½ cup Warm Water
Note - you can also use store bought bread or pizza dough if you wish
For the Filling
  • Any thick pesto or spread of your choice
  • 1 Tablespoon minced Garlic
  • Oregano or pizza seasoning
  • Pepper (optional)
Others
  • Melted Butter
  • Mozzarella or Parmesan Cheese
Instructions
For the dough
  1. Mix together the flour, salt, sugar instant yeast.
  2. Add in the plain yogurt, vegetable oil or melted butter and mix well. Add the warm water and mix well.
  3. Knead for 10-12 minutes to form a smooth dough. (You can also use an electric dough mixer).
  4. Oil the dough well, cover the bowl and allow the dough to double in volume. It should take anywhere between 1-2 hours.
Preheat the oven to 200 C (If using a convection oven, preheat to 170 or 180 C)
Cover a bread loaf pan with aluminum foil. This will prevent the bread from sticking to the surface. Oil the foil
To make the pull-apart bread
  1. Remove the dough onto a clean, floured surface. Roll out the dough to a ¼ inch thick rectangle / square piece.
  2. Spread the pesto / spread and minced garlic onto the dough, sprinkle lots of oregano / pizza seasoning, pepper all over the dough and grate some mozzarella or Parmesan cheese.
  3. Using a knife, cut equal sized square pieces of the dough.
  4. Start placing each piece of dough vertically from one side of the loaf pan. Stack up the pieces one after the other to form a loaf. If there are any additional pieces of dough left, just roll them and stick them to the surface.
  5. Brush the surface with melted butter generously.
  6. In the preheated oven, place the loaf pan and bake for 20 minutes covered with a foil.
  7. Remove the foil, grate some cheese on top, if you want and bake for another 10 minutes or until it is completely cooked.
  8. Remove from the oven and brush with more butter, if you like.
  9. Let the bread cool for 5 minutes and remove it out of the loaf pan.
  10. The dish will look like a bread loaf, but you can peel off each piece (pull-apart) and eat.

You can use any pesto / spread of your choice. I used a combination of green pesto and red chili garlic pesto. Spread the pesto onto the dough, sprinkle lots of oregano / pizza seasoning and grate some mozzarella or Parmesan cheese all over the pesto.
