Chilli Kothu Paratha

Inspired by the Chinese cuisine, here is a lovely recipe for Kothu Paratha!

I’ve said it before and I’ll say it again: Indians love their version of Chinese food. So much so that besides making many Chinese recipes our own, we’ve gone ahead and extrapolated the flavors to our local dishes too!

This vegetarian Chilli Kothu Paratha is one such dish that combines the best of Indian and Chinese cuisines. You’ll find this dish in most restaurants in Tamil Nadu. I’m not sure it is popular outside the state. But if it isn’t it should be. It tastes amazing!

It’s pretty much like making Chinese Noodles or Paneer Chilli. Instead of the noodles or paneer, you add crispy paratha and let that soak up the flavors. When you take a spoonful of the Koththu paratha, you’ll find a delightful mix of the slighty soft (yet crispy) paratha and all the Chinese flavors you love.

As the kothu paratha sits longer, it absorbs the sauces and gets a little soft. But it is also part of what makes the dish so interesting. You can make this with regular paratha, malabar / lachcha paratha or even roti!

Chinese-inspired Kothu Paratha or Koththu Roti

Ingredients
  • 8 Malabar Parotta
  • 1 inch Ginger, grated
  • 4 Garlic cloves, minced
  • 3-4 Green chilli, chopped roughly
  • 1 cup Spring Onions, chopped (white part) (use regular onions if unavailable)
  • 1 cup green Bell Peppers, chopped
  • 1 cup Carrot, grated
  • 2 teaspoons Salt (adjust to taste)
  • ¼ teaspoon Sugar
  • 2 teaspoons ground Black Pepper
  • ½ teaspoon Vinegar
  • ½ teaspoon Soy Sauce
  • 1 teaspoon Red Chilli Sauce
  • 1 Tablespoon Tomato Ketchup
Notes
  • Malabar Parotta works the best. But you can use regular roti or paratha too. While cooking, make sure you cook on both sides on low heat for a longer time to make them crispier.
  • You can use more veggies like red & yellow bell peppers, broccoli, lettuce
Instructions
  1. Cook your parathas or rotis on medium heat for a longer time on both sides to make the paratha crispier. If you have the patience, chop the parathas into equal bite sized pieces. Or just tear them up into small pieces.
  2. To a large wok, add vegetable oil. Once it is hot, add the chilli, ginger and garlic and let them fry for 15-20 seconds.
  3. Add the onions and fry them on high heat for 1-2 minutes. Stir constantly to avoid burning.
  4. Add the bell peppers and fry on high heat for 2 minutes.
  5. Add the sauces – soy, vinegar, ketchup and spices – salt, black pepper and a pinch of salt. Mix well and fry for another 2 minutes.
  6. Add the torn up pieces of the paratha and mix well.
  7. Add grated carrots and mix well.
  8. Taste and adjust for seasoning. Fry on high heat for 2 minutes.
  9. Add the greens of the spring onion and mix. Switch off the flame.
  10. Your kothu paratha is ready! Serve warm.
Note
  1. Although it tastes best when served fresh, It also stays in the refrigerator in an air tight container for 2 days. Warm it up before serving

Kothu Paratha Recipe (Koththu Roti) – Step by step pictorials

Cook your parathas such that they turn nice and crispy. I’ve tried it with regular roti, paratha and Malabar Parotta. In my opinion, the malabar paratha makes for the best kothu paratha recipe. But you can use whatever you like! Just make sure you cook them on medium heat for a longer time on both sides to make the paratha crispier.
