Corn and Onion Calzones. Just something I made to feed the pizza craving I had.

And look – how well that turned out!

The answer is – too well! A whole wheat pizza dough base and a spicy filling topped with crumbled feta cheese. It was pretty much a winner even before it went into the oven. They came out brown, crispy and hot! And I knew I’d reached my baking nirvana for the day! ;)

Calzones can have whatever you want them to. A pizza base with a fill and folded like a half moon is what calzone really is. SO it really doesn’t matter if you fill it with the filling that I have or you use your imagination. In fact, even if you don’t fold it and leave it out like a pizza – the taste isn’t gonna change.

But there’s something fun in eating a calzone. And if you think about it, it makes an excellent dish for lunch boxes! It won’t get as messy as a Pizza Slice does and it still will taste like a pizza. A pretty sweet deal if you ask me. :)

CORN AND ONION CALZONES RECIPE

Here’s what you’re gonna need –

For the Filling – I decided to sauté the onions and flavor it. You can even fill raw ingredients.

In a pan, heat oil/butter and add the chopped onions and minced garlic.

Sauté until they are lightly golden brown.

Add the spices – pepper, oregano, hot pepper flakes (chilli powder), salt.

Cook till the onion dries out a bit

Add the boiled corn and chopped parsley leaves

Mix well and set aside to cool.

Preheat the oven to 200 C / 400 F

Cut the pizza dough into small pieces. (I decided to make individual calzones for everyone. If you wanna make a llarge one & then cut it into pieces, that’s okay too) {I used homemade Whole Wheat Pizza Dough}

Roll each piece into a thin, small disk

On one half of the circle, add the filling leaving at least 1/2 an each on the sides. Crumble some feta cheese (optional) on top

Close the filling with the other half of the dough

Press the edges well and fold them slightly in.

With a fork, press the edges again to seal them completely.

Place on a greased baking dish, cover them and let them rest for 20-25 minutes or until they have puffed up a bit. Poke holes with a fork on top of the Calzones

Brush each calzone with melted butter (or egg wash or cream)

Bake at 200 C for 15 minutes or until the top has browned and the calzones are cooked.

Serve the corn and onion calzones hot with your favorite condiment!

Serves: 6-8 medium sized calzones
Ingredients
  • 12 ounce Pizza Dough (Homemade / Store-bought ; Regular / Whole-Wheat)
  • Melted Butter / oil / Egg wash (or vegan butter)
For the Filling
  • 1 cup finely chopped Onions
  • ⅓ cup Boiled Corn (or washed & rinsed canned corn)
  • ⅓ cup finely chopped Parsley (or coriander leaves)
  • 2-3 Garlic cloves, minced
  • 2 teaspoons Oregano (or Italian spice mix)
  • 2 teaspoons Red Chilli Powder / Flakes (adjust according to heat)
  • 1 teaspoon Salt (adjust to taste)
  • a pinch of Sugar (optional)
  • Crumbled Feta Cheese / Paneer (optional) {skip for vegan version}
  • 2 teaspoons Oil (any odorless oil)
