Decadent brown sugar infused dark chocolate cookies – worth every crunchy bite!

While using powdered sugar would have given me a smoother finish, the brown sugar gave me rustic looking cookies that honestly – was better than the smooth cookies! Add to that the caramelization of brown sugar and the punch of mocha flavor running in the background, you’ve got yourself one huge hit!

I find myself appreciating mocha and dark chocolate flavors more and more these days. Hence, I’ve amped up the amounts of cocoa and espresso powders in the recipe. But if you would rather have a simple chocolate cookie, feel free to adjust the quantities in the recipe.

Serves: 8-10 medium cookies
Ingredients
  • ⅓ cup Soft Butter
  • ½ cup Granulated Brown Sugar (adjust for taste)
  • 1 teaspoon Instant Espresso Powder
  • ¾ cup All Purpose Flour
  • ¼ cup Cocoa Powder (adjust according to taste)
  • a pinch of Salt (skip if using salted butter)
  • ¼ teaspoon Baking Soda
Substitutes
  • Granulated Brown Sugar - Any Sugar (but adjust for sweetness as required)
  • Instant Espresso Powder - Brewed Coffee / Vanilla Extract / Skip
Instructions
  1. Preheat oven at 180C. Line baking sheet with parchment paper.
  2. Add sugar and butter to a mixing bowl and cream together for 2-3 minutes. Add the espresso powder and mix well
  3. Sift in the flour, salt, baking soda and cocoa powder.
  4. Mix to form a soft cookie dough. You can form cookies right away or store in freezer up to 3 days.
  5. Form equal sized balls and slightly flatted out. Place on a baking sheet lined with parchment.
  6. Bake at 180C for 10-12 minutes. Let them cool completely.
  7. Store in air tight box up to 10 days.
