Stuffed with chocolate, this buttery cookie dough is fabulous enough to eat raw. And once you bake it to perfection, you’ve just got the most interesting cookie in your hands! The texture of the cookie itself is smooth, almost a wonderful intersection between soft and crispy. I don’t know about you, but I need my cookies to be a little crunchy. I don’t get the whole “soft cookie” concept. If I wanted to eat something soft, I would eat a cake or a cupcake or a brownie slice right? But I’ve also tasted extremely crunchy cookies and I don’t like them either. I need a cookie somewhere in between. And these dark fantasy cookies are so far the best textured cookies I’ve baked – only second  to my classic Chocolate Chip cookie! 😉

Another crucial ingredient is powdered sugar. It gives such a smooth finish to these cookies that you wouldn’t get by using granulated sugar. The remaining are pretty much standard ingredients used in a cookie. You can skip the espresso powder if you want. However, I feel like it enhances the chocolate flavor of the cookie and is also important to prevent the cookie from being overly sweet.

Serves: 24 small cookies
Ingredients
  • ⅓ cup Butter, soft at room temperature
  • ⅓ cup Powdered Sugar (adjust to suit your taste for sweetness)
  • 1 Tablespoon plain Yogurt
  • 1 teaspoon Vanilla Extract
  • ¾ cup All Purpose Flour
  • ¼ cup unsweetened Cocoa Powder
  • ¼ teaspoon Instant Espresso Powder
  • ¼ teaspoon Baking Soda
  • a pinch of Salt (skip if you are using salted butter)
  • Chocolate Slab, cut into small squares {use any baking chocolate}
1 cup = 200 grams.
Notes
  • Espresso / Coffee Powder - You can skip this if you want. I believe that the instant espresso powder enhances the chocolate flavor and cuts the sweetness a little bit. However, if you don't want, just skip this and add a pinch of salt.
  • Plain Yogurt - Plain yogurt keeps the cookies a bit soft. Skip it if you want crunchy cookies.
Instructions
  1. Cream together butter and sugar for 1-2 minutes till you have a smooth, creamy mixture.
  2. Add the yogurt, vanilla and mix well.
  3. Sift in the dry ingredients - flour, cocoa powder, baking soda, salt, espresso powder.
  4. Mix together till the dry combines with the wet mixture and you have a soft dough. Do not over mix or you will end up with a tough textured cookie.
  5. Cover the cookie dough and chill in the fridge for at least 30 minutes.
  6. Meanwhile, preheat oven to 180 C / 350 F. Grease and line a baking sheet with aluminum foil / parchment paper.
  7. Take the dough from the fridge. Take 1 tablespoon measure of the dough and roll into a ball. Stuff each ball with a small slab of chocolate and roll it again to seal the chocolate with dough.
  8. Place the cookie dough balls on the prepared baking sheet 1 inch apart. Gently flatten out each of the cookie.
  9. Bake at 180 C / 350 F for 10-12 minutes. Allow it to cool completely.
  10. Serve as is or with a glass of milk. This stays well in air tight box up to a week.

*** You can use any baking chocolate or even regular chocolate slabs (like Hershey’s, Cadbury) to stuff these dark fantasy cookies.

Mix just until the ingredients are well combined and you have a soft dough.

Take 1 tablespoon and make smooth balls of the dough. Place a small slab of chocolate in the center.

Pinch together the dough and roll again to form a cookie dough ball.

Place all the formed cookie dough balls on a prepared baking sheet. Slightly flatten them out.

Bake at 180 C for 10 minutes. Let them cool completely.

    Hi..tried out the cookie recipe…for the first time as my daughter loves dark fantasy cookies..the taste is simply awesome , its delicious… But my cookies didn’t came out crispy …and the chocolate is not melted as yours…please guide where I went wrong…

    1. Hi Sabia,
      1) Skip the yogurt if you want crispier cookies. I’ve mentioned the same in the post as well
      2) Which chocolate did you use? Usually, chocolate tends to harden. If you want to keep it melted, you will have to warm the cookies before serving. Moreover, use chocolates that can melt (like Morde or any baking chocolate)

  3. Thanks Kavita for this recipe… just wondering whether you have baked this in black beauty? if not can you suggest me how much time /temp. shd I bake in BB?

    1. I’ve baked in both convection BB & my OTG.. I like the results from OTG better… But the concept of baking in convection is the same. just reduce the temperature by 10-20 C and bake for 2-3 minutes longer or until you have the desired texture. (I baked at 160 C for 14 minutes & felt I could have kept for 1 minute longer) .. Hope this helps!

      Did you use yogurt / curd? If yes, then try without them the next time. Also, try baking for 1-2 minutes more.
