Make the best of in-season mangoes and make this delicious mango mousse.

Every bite of this airy dessert will give you a taste of fresh mangoes. And even if mangoes aren’t in season, you can always use frozen mango puree (thank you freezer!) to make this any time you want. Although, I’d rather you enjoy fresh fruit that frozen puree. The difference is substantial!

Most of my mousse recipes follow the same steps – Make a pudding, tweak the flavor and fold in some whipped cream to make the mousse base. I’ve found that these steps give me an eggless mousse – the texture of which is almost close to a regular mousse recipe. You can make the base using marshmallows to save you time if you want (there are vegetarian marshmallows available too). However, for the purpose of this recipe, I made the mousse using a pudding base made with agar agar. Here is how I made my favorite mango mousse at home –

Recipe type: Dessert
Serves: 2 large servings or 20 shots of mango mousse
Ingredients
  • 1 Fresh, Ripe Mango (*Refer Note 1)
  • 1 Tablespoon Agar Agar flakes / Gelatin
  • ¼ cup Water
  • 1 Tablespoon Cornstarch
  • 1 and ¼ cup Milk (preferably full fat whole milk)
  • ¼ cup Tablespoons of Sugar (adjust to taste)
  • 1 cup sweetened Whipped Cream (*Note 2)
Notes
  • If Mangoes are not in season, you can use frozen mango puree too.
  • Use ½ cup of cold heavy whipping cream and ¼ cup powdered sugar and whip together to form stiff peaks. Or use readily available whipped cream
Instructions
  1. Cut the pulp out of the mango and blend it to a smooth puree. Set aside.
  2. Add agar agar / gelatin to water and let it boil for a minute or 2 until it dissolves.
  3. Also mix cornstarch (cornflour) with ¼ cup of Milk and set aside.
  4. Add sugar to milk and bring it to a boil. Keep stirring to avoid sugar or milk burning. Once the sugar dissolves, reduce the heat to medium low and let it boil for 5-6 minutes. This helps make the mousse texture a lot creamier. Taste and adjust for sweetness at this stage.
  5. Add the cornstarch-milk mixture to the milk and keep stirring continuously. Cook on low heat till you get a thick custard like consistency.
  6. Add the agar-agar / gelatin mixture and mix well. Switch off the flame and continue stirring as it cools completely. This ensures that there is no skin that forms on the surface of the mixture.
  7. Add the mango puree to the pudding-like mixture and mix well.
  8. Once the mixture is cool, add whipped cream and fold it in until it is fully mixed.
  9. To a serving glass, add some mango puree to the bottom and fill it with mango mousse and top it off with more mango puree. Close with a lid / foil and refrigerate for a few hours or until it is set completely.
  10. Serve with a slice of mango on top.
Note
  1. This stays well in the refrigerator for up to a week.
