Applesauce is such an amazingly useful thing to have in your refrigerator!

Since my buttermilk-in-baking discovery, I’ve had an amazing string of recipe-successes while experimenting with bread dough. Similarly, applesauce is that one thing that has completely changed the way I bake anything sweet (cakes, brownies, cupcakes, muffins, pancakes etc.). 

It makes the end dish moist, soft and so flavorful! Using applesauce means I don’t have to use as much “fat”  (like butter or oil) in the recipe. Sure, there will be a slight hint of the apple flavor in the dish, but that really doesn’t bother me at all. In fact, when I made Vegan Coffee Brownies with applesauce, the coffee flavor overpowered the applesauce. So the only thing that applesauce did was add the moisture to the brownie-batter.

Homemade applesauce stays good in the refrigerator for up to a week. Because it is just so easy to make, I suggest you plan for weekly requirements. However, if you’re pressed for time (or you want to use up apples when in season), you can make a large batch and freeze it for over 3 months (some people say 1 year – but I honestly haven’t tried to freeze it tat long so I cannot vouch for it). Here’s how easy it is to make applesauce at home –

Ingredients
  • 2 Medium Apples
  • ½ cup Water (plus a little more, as required)
  • ⅕ cup Sugar / Jaggery / Organic Sugar (adjust to taste)
Notes
  • If you want unsweetened applesauce for baking purposes alone, then leave the sugar out
Note - Apple
  • Apples vary in their sweetness level, depending on the variety and how late in the season they are picked. The amount of sugar you want to add will depend on how sweet your apples are, and how sweet you would like your applesauce to be. This recipe is just a guideline, please adjust the sugar amounts to your taste. You can even leave the sugar out all together if you are using sweet apples.
Instructions
  1. Scrape the skin off the apples. Core the apples. And chop them into 1-2 inch cubes (or even smaller). You can alternatively also grate apples.
  2. Add the apples to a pan with high sides. Add some sugar (or brown sugar or jaggery or organic sugar) and water.
  3. Bring the mixture to a boil. Reduce the flame to medium low, cover with a lid and cook for 30 minutes.
  4. Every 5 minutes, open the lid and stir the mixture to avoid the apples from sticking to the bottom. If the water is dried, add a little more splash of water and mix well.
  5. You should keep cooking till the apples are soft and fully cooked through.
  6. To test if it is cooked or not, use a fork / toothpick to prick one of the apples. If it very soft & falling apart, it is done.
  7. Use a vegetable-masher to mash the applesauce finely. If you want, you can add the apples to a blender and blend it to a thick paste too. Then add it back to the stove and cook for 2 minutes or till you reach the consistency you like.
  8. Your applesauce is ready. Store it in an airtight jar in the fridge for up to 1 week. Or you can freeze it for 3 months and use as required.

  1. You can use this to make a tonne of cake / pancake batters
