Mexican Tortilla Pizza

Somebody on my Facebook Page requested  for Pizza recipes. And so I made a Pizza! (Did you know I take Recipe requests? Just drop a comment on my Facebook page and you can find your dish on my blog within a month or two! ;)) Only, I decided to take the idea of a Pizza and do something fun with it. Like make it on a tortilla base. Besides being fun, it is healthy too! I would make Pizza on a Tortilla base… more often than on a regular flour base! It has a delicious flavor and a naturally thin crust! Mexican Tortilla Pizza – FTW! You could use any store bought tortilla. Since we make Whole Wheat Tortillas at home (also called Roti / Chapati), it seemed like a good idea to just use them instead. I loved the nutty flavor of the Tortilla combined with the Mexican flavors. It sure is a winning combo! For the base sauce, you could use a simple Tomato sauce or be fancy and use a Marinara, sour cream, guacamole… etc. I made an instant Mexican flavored sauce that definitely made the Pizza taste so Mexican! ;)
Again, I have a couple of pointers when it comes to the ‘cooking‘ part. You could grill it, bake it on make it on a griddle pan depending on what equipment you have at home. Personally, I loved the grilled version the most. Not only does the crust become crispy; but the cheese on top becomes a beautiful golden brown that makes the Pizza look divine! If you make it on a flat griddle pan, you’ll get your wonderful crust.. but the cheese can only melt.. It doesn’t get brown. Whatever works for you. :)
And finally, before you think I’m never gonna share the process with y’all, you need to know that this doesn’t have to be ‘Mexican’. The usual toppings for a ‘Mexicana Pizza‘ are chorizo, jalapeño pepper slices, grilled or fried onions, tomato, chile, hominy, shrimp, avocado, and sometimes beef, bell peppers, tripas or scallop. But you can use whatever you have on hand. Leftovers work perfectly well too. Try it out & let me know what you think! :)

Here’s what I used to make the Mexican Pizza –

To make a quick sauce, to a microwave bowl, add the tomato ketchup, butter, minced garlic, ground pepper & chilli flakes.

Microwave it for 1 minute. Mix well to form the sauce. (If you don’t have a microwave, simply heat it on a low flame till the butter is melted)

Apply the sauce to the tortilla base, leaving about half an inch on all sides.

Place all your toppings however you desire. I made some of the Pizzas with different kinds of bell peppers while some had boiled sweet corn, jalapeno & onions. Whatever you choose, arrange them neatly. Don’t overdo the toppings or the Pizza would get soggy

Top it off with some cheese… the more the better! ;) You could use Pepperjack cheese, mozarella or cheddar or whatever you please!
If you’re cooking on the griddle (flat pan), close with a lid (that is NOT touching the cheese or toppings), reduce the flame to as low as possible & let it cook for 4-5 minutes.

Remove the lid. The cheese would have melted & the bottom becomes crispy. Slice & serve.
If you’re making in the oven - place it on the baking sheet / grill pan.

I set the grill (at highest temp) and grilled for 4-5 minutes – until the cheese melts & starts to turn lightly golden.

Slice and serve with some toppings of your choice!

My favorite one was the Pizza with Jalapeno & Sweet Corn! Deeeelicious! :D

Serves: 4-6
Ingredients
  • (enough for 4-6 bases)
For the Sauce
  • ½ cup Tomato Ketchup
  • 1 tsp Ground Black Pepper
  • 1 tsp Red Chilli Flakes (skip if don't want spicy)
  • 1 tsp Butter
  • 1 tsp Minced Garlic (paste)
  • a pinch of salt
For the Base
  • Homemade or Store Bought Tortillas. (I used Wheat flour tortilla - ROTI / CHAPATI)
For the Toppings (use all or any toppings of your choice)
  • ½ cup boiled Sweet Corn Kernels
  • ½ cup Onions, finely chopped or sliced
  • ½ cup Bell Peppers, finely chopped or sliced
  • ¼ cup Jalapeno peppers, thinly sliced
  • Cheese (Mozzarella / Pepper-jack / Cheddar / any)
  • Other Options - chorizo, jalapeño pepper slices, grilled or fried onions, tomato, chile, hominy, shrimp, avocado, and sometimes beef, bell peppers, tripas or scallop or chicken
