This past weekend, I got to visit the quaint little offices of VKL Group in Mumbai and experience Food Service India’s hospitality.

Food Service India (FSI)  is India’s largest F&B solutions provider. They work exclusively with hotels, restaurants and caterers (HORECA). They provide the widest range of products to restaurants covering soups, appetizers, main course and desserts across cuisines such as Indian, Oriental/Eastern, Continental/Western and Fast food.

You can imagine my surprise when I was invited to be part of a celebration of food, drink and conversation – especially since I’m none of the 3 segments they cater to! But in their own words – “you are our end consumer and we wanted to connect with you to get your experience“. And I knew it was going to be a fun afternoon!

Arrabbiata Sauce with Pasta

This is the simplest version of  classic Spicy Arrabbiata Sauce.

Today, I’m sharing the classic Italian spicy arrabbiata sauce recipe. Spicy, delicious and ideal with spaghetti or penne, this is an all-purpose sauce that takes 30 minutes (tops) to put together.

Arrabbiata literally means “angry” in Italian. The name of the sauce refers to the spiciness of the chili peppers. The more you add, the spicier your sauce will become (duh). It works well as a dipping sauce too.   (more…)

I’ve said it before and I’ll say it again: Indians love their version of Chinese food. So much so that besides making many Chinese recipes our own, we’ve gone ahead and extrapolated the flavors to our local dishes too!

This vegetarian Chilli Kothu Paratha is one such dish that combines the best of Indian and Chinese cuisines. You’ll find this dish in most restaurants in Tamil Nadu. I’m not sure it is popular outside the state. But if it isn’t it should be. It tastes amazing!   (more…)

Trying to use some old apples (because they cost a bomb and I don’t want to waste them) led me to making this chutney / dip / relish kind of recipe. And I have never been more grateful to rotting apples, I tell ya!

I’ve always been a sucker for anything sweet-and-salty. So I guess I shouldn’t be too surprised about falling in love with this apple onion chutney over and over again.   (more…)
