Pasta Primavera

Pasta Primavera is a a quick pasta dish with a tonne of vegetables.

This pasta dish has a very interesting sauce-base. The sauce (if one might call it that) is made up of the reduction of the sauteed veggies.

Pasta Primavera is just that. Saute some veggies, flavor with pasta seasoning, add some flour and water to make a sauce-like consistency and add cooked pasta! As healthy as a weeknight meal can get.

The only step that probably would take time is chopping veggies! If you prep that ahead of time, this whole thing would take under 30 minutes to put together! I urge you to experiment with all kinds of veggies. More the veggies, better is the flavor.

Ingredients
  • 1 lb Spaghetti or any Pasta of your choice
  • 4 Tablespoons Vegetable Oil or Olive Oil
  • 2 Tablespoons Minced Garlic
  • 1 Tablespoons Red Chilli / Hot Pepper Flakes (adjust for spice)
  • 4-5 cups of Mixed Veggies (Refer Note 1)
  • 2 teaspoons Salt (adjust to taste)
  • 1 Tablespoon All Purpose Flour
  • ½ cup Water or Vegetable Stock
  • ½ cup Boiled Peas (lightly salted)
  • ½ cup Boiled Sweet Corn (lightly salted)
  • ½ cup cooked / steamed Broccoli (optional)
  • 2 teaspoons Ground Black Pepper
  • 2 teaspoons dried Oregano
  • ½ cup fresh chopped Parsley or Cilantro
Note 1 - Veggies - You can use any veggies you have on hand. Suggested veggies -
  • Onions
  • Carrots
  • Zucchini
  • Bell Peppers
  • Baby Corn
  • Green Beans
Note - add more spices / seasoning to suit taste
Instructions
  1. Heat oil in a pan. Add minced garlic and chopped hot pepper flakes and fry for a few seconds. Then add veggies one by one (in the order it takes for them to cook) and cook them with a little salt.
  2. Once the veggies are cooked, add some all purpose flour and mix it with the veggies.
  3. Add some water / vegetable stock and let it boil for for 3-4 minutes or until the water thickens into a sauce-like consistency.
  4. Add the boiled peas and sweet corn and broccoli.
  5. Then add some ground black pepper, oregano, more salt if required and mix well.
  6. Mix in some chopped parsley or cilantro.
  7. Meanwhile, cook Spaghetti or any pasta al dente. - Boil enough water in a large pot and add a generous pinch of salt. Add the pasta to the boiling water and cook for 8 minutes or till it is cooked to perfection. Drain water and add the spaghetti or pasta back to the large pot.
  8. Add the sauce and veggies mix to the pasta and mix well.
  9. Taste and add more pasta seasoning if required.
  10. Serve fresh Pasta Primavera.

Add the boiled peas and sweet corn and broccoli Then add some ground black pepper, oregano, more salt if required and mix well. Mix in some chopped parsley or cilantro.

Cook Spaghetti or any pasta al dente. Add the sauce to the pasta and mix well. Taste and add more pasta seasoning if required.

Serve fresh Pasta Primavera! You can add some cheese if you want, but it is unnecessary since it tastes fresh as is.
