Rocky road brownies are simple chocolate brownies topped with a layer of chewy marshmallows, nuts and even more chocolate! Warning: You can’t stop at one!

Crunchy, roasted & salted nuts.
Chewy, roasted marshmallows.

These qualities pretty much sum up all the reasons why I love Rocky Road Brownies. I’ve always been someone who loves different textures and flavors in her food. These brownies are a perfect jumble of all!

Rocky Road Brownies Recipe

You’ll need –
Eggless Rocky Road Brownies Recipe

Mix all purpose flour, cocoa powder, sugar, salt, baking powder & baking soda.
Eggless Rocky Road Brownies Recipe

Add in melted chocolate, oil and yogurt.
Eggless Rocky Road Brownies Recipe

Mix to form a smooth batter (Do not overmix or you’ll end up with a bread like texture)

Pour the batter into a prepared baking pan.

Bake at 160C for 20-25 minutes or until the brownies are almost done.

Remove from the oven and immediately top off with chopped nuts, marshmallows and chocolate chips (or chunks).

Return back to the oven and bake for another 5 minutes or until the marshmallows start to melt and form a brown color.

Let it cool completely before cutting into bars. Enjoy!

Serves: 9X13 inch Brownie Bar
Ingredients
For the brownies (You can also use your Brownie recipe or a brownie-mix)
  • 1 and ¼ cup All Purpose Flour
  • ¼ cup Cocoa Powder
  • ⅔ cup Powdered Sugar (adjust to taste)
  • a pinch of Salt
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ cup Melted Chocolate (optional) {melt chocolate chips / baking chocolate in microwave}
  • ⅓ cup Vegetable Oil
  • ½ cup Yogurt
  • 2 teaspoons Vanilla Extract
Toppings
  • ¼ cup Chopped Mixed Nuts (almonds, cashews, walnuts, pistachios etc.)
  • ¼ cup Chocolate Chips (or finely chopped chocolate chunks)
  • ½ cup Chopped Marshmallows
Note
  • This makes 1, 9X13 inch long Brownie bar.
  • You can add how much ever nuts / chocolate chips / marshmallows as you want as long as the brownie can hold that much. Do not overcrowd the pan
Instructions
  1. Preheat oven to 160 C / 325 F. Grease and line a 9X13 inch Baking Pan.
  2. Mix all purpose flour, cocoa powder, sugar, salt, baking powder & baking soda.
  3. Add in melted chocolate, oil and yogurt. Mix to form a smooth batter (Do not overmix or you'll end up with a bread like texture)
  4. Pour the batter into a prepared baking pan. Bake at 160C for 20-25 minutes or until the brownies are almost done.
  5. Remove from the oven and immediately top off with chopped nuts, chocolate chips (or chunks) and marshmallows.
  6. Return back to the oven and bake for another 5 minutes or until the marshmallows start to melt and form a roasted brown color.
  7. Let it cool completely before cutting into bars. Enjoy!
