I believe this is a recipe that you should all have in your little book of priceless recipes! SO useful is this sauce in so many of my kitchen escapades that I can’t imagine how I ever cooked before discovering the recipe! đŸ˜€Â  Think – Sichuan Fried Rice (Schezwan.. .one and the same thing!), Schezwan Fried Noodles, Schezwan Noodle Soup, Schezwan Stir Fried Veggies, Sichuan Spring Rolls…. And if you are a meat lover, the possibilities are endless! As if that weren’t enough, this Schezwan Sauce proves to be even better by being an excellent dipping sauce or a spread as well!

SCHEZWAN SAUCE RECIPE | How to make Sichuan Sauce in Microwave

{Imp: I make this sauce using the Microwave and a blender. This recipe can just as easily be adapted to make on the stove top as well. Scroll down to the Printable recipe for both methods}

You’ll need –

In a microwave safe bowl, add the chillies and 1 cup of water. Cover and cook on full power for 4-5 minutes.

Add the chillies to a blender (or food processor)

Grind to a coarse paste to break up the chillies.

Add 12 cloves of Garlic to the blender

Grind again until you have a smooth paste

Meanwhile, in a microwave safe bowl, heat up the oil and add 2 cloves of minced garlic, finely chopped spring onion bulbs, grated ginger, finely chopped green chillies

Cover and Microwave on full power for 2-3 minutes.

Add the ground red chilli & garlic paste, celery, tomato ketchup, salt, sugar, MSG and some water or vegetable stock

Mix well, cover and microwave on full power for 3-4 minutes or until the sauce becomes thick (or a consistency you like)

Add the vinegar, spring onions and mix well. Microwave for 1 minute.

(Taste and adjust seasonings. If it is too spicy for you, add more sugar, salt and vinegar little by little till you want)

Ingredients
  • 20 Dried Red Chillies (Or Sichuan / Schezwan Red Peppers)
  • 2 Green Chillies, finely chopped (optional = skip if you want less spice)
  • 2 finely chopped Spring Onion bulbs (if unavailable - use ½ of red or white onion)
  • ¼ cup of finely chopped Greens of the spring onions (optional)
  • 1 Tablespoon grated Ginger
  • 14 cloves of Garlic (medium sized)
  • 2-3 inch Celery stalk, finely chopped (optional)
  • ¼ cup Vegetable Oil
  • 5 Tablespoons Tomato Ketchup (or tomato paste)
  • ¼ cup water or Vegetable stock
  • 1 and ½ Tablespoons of Salt (adjust to taste)
  • 1 - 2 teaspoons of Sugar (adjust to taste)
  • 3 teaspoons of Vinegar (more if too spicy)
  • ¼ teaspoon MSG (Ajinomoto) - {optional}
Note
  • Skip MSG if you want. It just enhances the flavor. But it isn't very good for health. And the sauce tastes very good without that as well
  • The salt & sugar measurements given here are what suits for us. If the sauce is too spicy for you, you can increase the proportions of all these ingredients to suit your taste. Start by adding half a teaspoon of sugar, then salt.
  • You get Schezwan red peppers especially for this kind of sauce. However, ANY dry red chilli would work as well. But depending on the type of chilli, the spice levels will differ.
Instructions
MICROWAVE METHOD
  1. In a microwave safe bowl, add the chillies and 1 cup of water. Cover and cook on full power for 4-5 minutes. If there is any leftover water, discard it.
  2. Add the chillies to a blender (or food processor) & Grind to a coarse paste to break up the chillies.
  3. Add 12 cloves of Garlic to the blender. Grind again until you have a smooth paste
  4. Meanwhile, in a microwave safe bowl, heat up the oil and add 2 cloves of minced garlic, finely chopped spring onion bulbs, grated ginger, finely chopped green chillies. Cover and Microwave on full power for 2-3 minutes.
  5. Add the ground red chilli & garlic paste, celery, tomato ketchup, salt, sugar, MSG and some water or vegetable stock. Mix well, cover and microwave on full power for 3-4 minutes or until the sauce becomes thick (or a consistency you like)
  6. Add the vinegar, spring onions and mix well. Microwave for 1 minute.
STOVE TOP METHOD
  1. In a small pan with high sides, add the red chillies, water. Cover and cook for 4-5 minutes (to soften up the red chillies)
  2. Drain the water & Add the red chillies, 12 cloves of garlic to a blender. Grind to a fine paste
  3. On a pan, heat up the oil. Add grated ginger, 2 cloves of minced garlic, finely chopped spring onion bulbs, chopped green chillies. Fry for 2-3 minutes of medium high till the onions turn translucent
  4. Add the ground chilli paste, tomato sauce, salt, sugar, MSG and some water (or vegetable stock). Mix well and cook on medium flame for 4-5 minutes until the sauce thickens up ill the consistency you like.
  5. Add vinegar and spring onion greens and mix well. Cook for a final 2 minutes
Notes
  1. Taste and adjust seasonings. If it is too spicy for you, add more sugar, salt and vinegar little by little till you find the taste to your liking.
  2. Let the sauce cool completely. Store in air tight jars. Stays well in the refrigerator for upto 2 months

  2. The microwave instructions do not state to drain the chilies before grinding, but the stovetop instructions do say to drain them. Is it correct to include the steeping liquid in the microwave method and omit it in the stovetop method? Or should both methods remove it? Thank you for the clarification!
