Shankarpali is a snack popular in Maharashtra, India. It is traditionally enjoyed as a treat on the Diwali holiday.At home, Ma makes this to mix it with other homemade savory goodies to make a delicious mixture. Healthy? Of course not. But the deep fried goodie is such a delicious snack that we make it at every opportunity. 😀
SHANKARPALI RECIPE | Diamond Flour Biscuit
Makes – 2 cups
1 cup – All purpose flour
1/2 cup – Powdered Sugar
5 tbsp + more Vegetable oil (to deep fry)
5-6 tbsp Water
1. Mix flour & sugar well.
2. Heat 5 tbsp oil in a pan. When it is steaming hot, pour it into your flour.
3. Using a fork or a spoon, incorporate all the flour & the oil. (Don’t touch coz the oil is piping hot!)
4. Slowly, add water little by little. Using your hands, knead it to a soft dough for 15 minutes.
5. Make sure you give a lot of pressure & knead the dough well. Let it rest for half an hour.
6: Heat oil in a pan
7: Take the dough, divide it into 2 big balls.
8: Using a rolling pin, roll out each ball of dough into a flat disk.
9: Take a knife & cut the dough into thin horizontal stripes.
10: Now cut them vertically to give you small diamond shapes. Slowly, remove them from the surface & keep them in a bowl to fry. Repeat with the rest of the dough.
11: When the oil is hot enough, add all the diamonds to the oil.
12: Fry well on both side until they turn light brown & crisp. (Takes about 4-5minutes)
