Shortbread Cookies

This simple shortbread can be used as a base to a million other recipes! But it also tastes really good just simply dipped in chocolate!

Simple Shortbread Cookies Recipe When I kicked off my Holiday Bonanza with a Death by Chocolate Cake, I wasn’t so sure if a simple shortbread should follow. I mean – it is after all a humble biscuit made with nothing but butter, sugar & flour. How can it be worthy enough of a Christmas treat??

But when it came smelling incredible out of the oven, I knew this should definitely be the next recipe on Foodomania! :) You cannot find a simpler yet delicious treat to make during the Holiday time! Especially, if you take it up a notch and dip them all in chocolate!  

Shortbread is a crisp, rich & crumbly biscuit made with flour, butter and sugar. It is usually made with 1 part of sugar, 2 parts butter and 3 parts of flour.


Simple Shortbread Recipe

Preheat the oven to 170C / 350 F degrees. Line an 8×8 square baking pan or a bread loaf pan with parchment paper coming up the sides of the pan, spray with non stick cooking spray / melted butter / oil and set aside.

In a mixing bowl, add the butter, sugar and vanilla.

Beat well to form a creamy mixture. It will take about 1-2 minutes.

Add the flour and salt

and mix for 1 minute until you have a smooth dough. Do not knead too much

Add the dough into the parchment paper lined pan

Press it all to make it even. Use the back of a cup or ramekin to even it out.

Using a butter knife cut gently into equal sized bars (I got 14 cookies out of mine).

Using a fork, prick holes in each bar once.

Bake for 20 to 25 minutes or until lightly golden.

As soon as you take them out of the oven, run your knife through all the cuts again and let them cool completely. Remove from the pan and dip them in melted chocolate if you like.

Ingredients
  • ¾ cup of Unsalted Butter, at room temperature
  • 1 and ¾ cup of All Purpose Flour
  • ¾ cup of Confectioner Sugar
  • ½ teaspoon of Salt
  • 1 teaspoon of Vanilla Extract

  • Melted Chocolate or Chocolate Sauce for dipping - optional

  • Although traditional shortbread calls for 1 part sugar, 2 parts butter & 3 parts flour, there are different variations of the recipe and this is what works for me
