This Vegetarian Bean Chili is just a different version of the Indian Rajma Masala. When you swap the spices and slightly modify the way you cook an ingredient, you get a whole new dish!

This chili is great as is. Heat a bowl of this high-protein stew and enjoy a healthy, wholesome meal. Or alternatively, serve some crusty bread or a pot of rice to make it an even more elegant meal.

You can make this with any bean you like. Kidney bean is m preferred choice of bean. It cooks well and tastes the best with these spices. Just a word of advice – partially cook your beans (almost 80%) ahead of time. Adding dry beans to the dish will not work – and even if it does, it’ll take a very long time to cook. Alternatively, if you have access to canned beans, you could use them too. Keep cooking till the beans have cooked to the consistency and texture you like.

Spicy Mexican Vegetarian Bean Chili Recipe

Ingredients
  • 1 Kidney Beans - canned or pre-cooked
  • 3 Tablespoon Vegetable Oil
  • 1 cup Sliced Onions
  • ½ cup diced Carrots
  • 1 cup diced Bell Peppers
  • 2 cloves Garlic, minced
  • 1 teaspoon Tomato Paste or Ketchup - optional
  • 1 teaspoon Sugar or Brown Sugar
  • 1 teaspoon Cumin Powder (Jeera)
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Red Chili Powder / Hot pepper flakes (Adjust for spice)
  • 2 teaspoons Dried Oregano
  • ½ teaspoon Thyme
  • 1 Tablespoon Salt (adjust to taste)
  • ¼ cup chopped fresh Cilantro Leaves
Optional
  • ½ cup Sweet Corn, cooked
  • ½ cup crumbled Tofu or Paneer (Cottage Cheese)
You can replace the kidney beans with black beans and add more vegetables to make this into a one pot meal.
Tip - Beans
  • You can use any kind of pre-cooked or canned beans. Do not add dry beans here. It will take a very long time to cook.
Instructions
  1. Heat oil in a pan and add the onions. Fry on medium heat till they are translucent.
  2. Add the chopped carrots and mix well. Add some salt and fry for a few minutes to make the veggies sweat.
  3. Add the chopped bell peppers and fry for a couple minutes. Then add the minced garlic and mixed spices. Mix well and fry for 3-4 minutes on low heat.
  4. Add the crushed tomato / tomato puree and mix well. Let it cook for 10 minutes until the raw smell of the puree goes away.
  5. Add some canned beans / cooked beans and mix well.
  6. Add some vegetable stock or water. Taste the water and adjust for seasoning if required. Close the pan with a lid. Let it cook on medium heat for 20-30 minutes or until the mixture has thickened.
  7. Open the lid and garnish with some chopped coriander leaves and mix well.
  8. You can add some grated cottage cheese or tofu and mix well if you want
  9. Serve the chili as is or with a pot of rice or bread.
To Store
  1. You can refrigerate it for up to 5-7 days. Add a little water or stock and reheat before serving
