There is something so good in hand made bread, perhaps the sweat involved in the kneading process or whatever… it just makes the fluffy bread taste amazing! I’ve made tons of bread.. But I have a soft spot for stuffed breads. And this Veggie Swirl Bread is just something I came up with (pfff! :P) with leftover ingredients.

Start off with some all purpose pizza dough.

On a floured surface roll it out to a 1/2 inch thick elongated disk (almost a rectangular) {i made a mistake here and rolled it round}

Brush the rolled out disk with some melted butter, minced garlic and green chilli.

Also add some pesto / ketchup (not too much or it’ll get soggy)

Spread the finely chopped veggies on the disk leaving about 1/2 an inch on all sides

Add pieces of cheese (optional) and sprinkle herbs generously

Start rolling from side closest to you and roll into a tight roll / loaf.

Seal the edges or cut the excess dough on the edges. Place on a greased baking sheet. (Preheat oven to 200 C)

Let it rest & rise for 20 minutes in a warm spot. {The round ones besides the swirl bread are my Pizza dough Ravioli!}

With a knife, make shallow cuts across the loaf. Brush the loaf with melted butter & bake in preheated oven for 25 minutes of until golden brown.

Serve warm with favorite condiment.

Serves: 1, 9 inch loaf
Ingredients
Dough - I used regular pizza dough
  • ½ lb / 8 oz thawed dough for 1 loaf
Filling
  • 1 cup mixed finely chopped veggies (onions, bell peppers, carrots, zucchini etc. Squeeze as much water out of all veggies)
  • 2-3 teaspoons mixed herbs (oregano, pepper, thyme, parsley etc)
  • ¼ cup grated or torn pieces of Mozarella Cheese (optional)
  • 1 tablespoon Melted Butter
  • 2 cloves of minced Garlic
  • 1 Chilli, finely chopped (or 1 teaspoon hot pepper flakes)
  • 1 teaspoon Ketchup / Any Pesto
Others
  • Melted Butter (to brush on the loaf)
