As always, I’m starting off the year with something sweet. A cupcake recipe. Vanilla cupcakes frosted with delicious and creamy vanilla buttercream.

This is my favorite homemade vanilla cupcakes recipe. This is called the “very vanilla cupcake” because the flavor of vanilla is very intense and runs through every bite of the cupcake. Its a simple, no-frills recipe that makes really good cupcakes. And of course, it is eggless cupcake recipe – as always.

Intense Very Vanilla Cupcakes Recipe

Ingredients
For the Cupcake
  • ¼ cup Butter, soft at room temperature
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Vanilla bean seeds (optional)
  • ⅓ cup Vanilla Sugar or Regular powdered Sugar (adjust to taste)
  • 1 Tablespoon Milk Powder
  • 1 Tablespoon Condensed Milk
  • ¼ cup thick, Vanilla Yogurt or plain Yogurt
  • 1-3 Tablespoons Milk (use as required)
  • a pinch of Salt (skip if using salted butter)
  • 1 and ¼ cup All Purpose Flour (Maida)
For the Vanilla Buttercream
  • ¼ cup Butter, at room temperature
  • ¾ cup Powdered Sugar
  • 2 teaspoons Vanilla Extract
  • ½ split vanilla bean (add seeds scraped) - optional
Instructions
Cupcakes
  1. Preheat oven to 160 C (325F). If using a convection microwave oven, reduce temp to 140 or 150 C. Line cupcake molds with liners.
  2. Cream together butter, sugar and vanilla extract and vanilla seeds to form a smooth and creamy mixture.
  3. Add milk powder, yogurt, condensed milk and mix well.
  4. Sift in the flour and salt. Gently mix to form a smooth, lump-free batter. If the batter is too thick, add the milk to loosen it up.
  5. Scoop out the batter into prepared cupcake molds. Fill each mold half or ¾th full.
  6. Bake at 160 C (325 F) for 25 minutes or until it is fully cooked through.
  7. Remove, unmold and let it cool completely.
Frosting
  1. Beat together butter at room temperature, sugar, vanilla for 2-3 minutes until you have a smooth and creamy buttercream mixture. Keep it chilled until use.
Very Vanilla Cupcakes
  1. Fill ziplock bag with the prepared frosting and cut of one edge of the bag.
  2. Frost each cupcake with as much or as little frosting as you want.
  3. Chill the cupcakes for 20 minutes. Serve!

Scoop out the batter into prepared cupcake molds. Fill each mold half or ¾th full. Bake at 160 C for 25-30 minutes. Let the cupcakes cool completely. And remove from the molds.

To make the frosting – Beat together butter at room temperature, sugar, vanilla for 2-3 minutes until you have a smooth and creamy buttercream mixture. Keep it chilled until further use
