And no matter what people say (… Mom!), the concept of soft cookies are epic! I love these White Chocolate Chunk Cookies. And so will you.

Crunchy on the outside and soft on the inside. Isn’t that how you love your cookies? Maybe, maybe not.

But the idea is to keep you guessing until the very last bite… its crunchy. Oh its a cookie. Wait – it’s soft.. is it a cake?! :D

Remember when I started baking for friends and family? I’ve crossed off almost 15 people on the list! (I’m starting to sound like a creepy murderer, aren’t I?)

I made these for my Dance teacher. (I learn Classical dance, remember Natyakriya?) I’m not sure she understood why these were soft and not crunchy! And I’m not sure she enjoyed these that much. And so I gotta make some crunchy Chocolate chip cookies to redeem myself. :P

But if I were giving these cookies to myself, I’d be totally happy biting a crust and diving into soft cookie land!

Eggless Soft White Chocolate Chunk Cookies Recipe I’ve been using a lot of Brown Sugar in my baking these days. I love the nuttier flavor and deeper color it gives to my cakes / cookies. You can just as well use regular sugar.

WHITE CHOCOLATE CHUNK COOKIES RECIPE

You’ll need –
Eggless Soft White Chocolate Chunk Cookies Recipe

Preheat oven  to 180 C. Grease and line a baking sheet

In a bowl, add oil, brown sugar & vanilla. Mix well until sugar dissolves.

Add a dollop of yogurt (keeps the cookie soft. skip for crunchier cookies) and mix well.

Mix the all purpose flour, salt, baking powder, baking soda and regular sugar roughly and add the mix to the wet mixture.

Mix till the flour mixture is combined into the wet mixture.

Add chopped white chocolate chunks (or chips)

Fold them into the sticky dough.

Use 1 Tablespoon measure of a spoon. Lightly wet it and pick up dollops of the sticky batter. Wet your hands and roughly shape them into a round shape and place on baking sheet. Place each ball of cookie batter at least an inch apart.

Bake at 180 C for 12-14 minutes or until the cookies are lightly golden. (If you want crunchier cookies, continue to bake for another 5-6 minutes)

Let them cool in the baking sheet for minutes. Serve warm or completely cool.

Serves: 8-10 medium sized cookies
Ingredients
  • ⅛ cup Vegetable Oil
  • ⅙ cup Brown Sugar {adjust for sweetness} (* Note 1)
  • 1 teaspoon Vanilla Extract
  • ¾ cup All Purpose Flour
  • ⅛ cup Powdered Sugar {adjust for sweetness} (* Note 1)
  • ¾ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • a pinch of Salt (optional)
  • ¼ cup White Chocolate, chopped finely (*Note 2)
Notes
  • For sugar, you can skip 2 different kinds of sugar and just use 1 kind. (Ex: ¼ cup Brown Sugar or ¼ cup Regular powdered sugar)
  • Instead of White Chocolate chunks you can use chips or even milk chocolate chips

Note
  1. If batter is too tough, use 1-2 tablespoons of milk or water to loosen & make it sticky
  2. Keep a little water close by while shaping cookies. Lightly wetting hands & the spoon helps shape sticky batter easily
