Eureka! I found the perfect way to make Whole Wheat Pizza Dough.

Eureka! I didn’t exactly “find” it so much as “stumbled upon” it.

But still – Phew!

Now that I’ve seen that incorporating some whole wheat flour into the pizza dough doesn’t reduce its capacity to rise or be as elastic as refined-flour dough is, I feel like I’ve taken a major step towards healthy eating! 😀

Make no mistake – this recipe still does have refined flour which isn’t so great for you. But if you are going to be having bread (in any form), you might as well maximize its health benefits by switching to much more nutritious flours – am I right or am I right? 😀

If you’re planning on switching from plain flour to whole wheat flour there are two things you should know –

  • The bread will have an earthier, nuttier taste. If you aren’t used to it, you’ll find it weird. But I think it’ll grow on you. 🙂 Personally – having eaten Roti’s for so many years, I welcomed the taste.
  • If you don’t own an electric mixer to knead for you, you might have to spend a lot of time kneading the dough! (Much more than the regular dough). I kneaded for almost 25 minutes before it turned elastic, smooth & shiny.

You can freeze the dough like regular pizza dough and use it later.

Here’s what you’ll need

In warm milk, dissolve the sugar and add the yeast. Let it rest for 2 minutes. (If using Active Dry Yeast, wait for 5 minutes until the yeast starts to bubble up)

In a large mixing bowl, mix both types of flour, salt and oil

Slowly add the warm milk mixture to the flour

Knead for 20-25 minutes by hand (or 10-15 minutes by electric mixer) to get a smooth, soft & elastic dough.

Place it in an oiled bowl (and oil the top of the dough too) and let it rest in a warm spot for 1 and 1/2 to 2 hours or until the dough doubles up in volume.

Serves: 12 ounces of dough
Ingredients
  • ¾ cup Whole-Wheat Flour
  • ¾ cup All-Purpose Flour
  • 1 package (2¼ teaspoons) Quick-Rising Yeast (Instant yeast) {*read note below}
  • ¾ teaspoon salt
  • ½ teaspoon sugar
  • ⅔ cup Warm Water (115-120°F)
  • 2 teaspoons Oil (preferably olive oil) plus more
*Note
  • Preferably use Instant yeast. If using Active Dry Yeast, you will have to activate the yeast before using.
Instructions
  1. In warm milk, dissolve the sugar and add the yeast. Let it rest for 2 minutes. (If using Active Dry Yeast, wait for 5 minutes until the yeast starts to bubble up)
  2. In a large mixing bowl, mix both types of flour, salt and oil
  3. Slowly add the warm milk mixture to the flour
  4. Knead for 20-25 minutes by hand (or 10-15 minutes by electric mixer) to get a smooth, soft & elastic dough.
  5. Place it in an oiled bowl and brush the top of the dough with oil too and let it rest in a warm spot for 1 and ½ to 2 hours or until the dough doubles up in volume.
  6. Use as required.
Notes
  1. This works well for any savory bread preparation like Pizza, Calzones, Stromboli, Garlic Bread etc.
  2. If you haven't tasted whole wheat pizza dough before - it has a nuttier, earthier taste.

    1. Hi Dimple! Yeast is the one that gives you a bread like texture. There usually is no substitute for yeast. However, you can make pizza without yeast too – but the crust with be flatter (like a Roti or a Naan). Just make a normal Roti dough (but also add a pinch of baking soda and 1-2 tablespoons of curd), make Rotis and add pizza toppings!
