Okra Stir Fry (microwave version)

Okra stir fry recipe

Stir fried Vegetables are one of the most common sides to an Indian meal. Especially since no one has the time to be making ‘gravies’ for every meal. Being an Okra lover, I decided to try it in the microwave to minimize the characteristic “goo” that comes out every time you cook Okra (also commonly known as Lady’s Finger, Bhindi, Gumbo, etc.).

Criticize all you want, but Microwaves are life savers. I’m not asking you to cook all your meals in the Microwave. But the truth is, it saves a lot of time and you know it. Cooking Okra in Microwave is less messy, quick and also helps preserve the natural ‘green’ color more than if you were to cook it over a flame.

Okra Stir Fry – South Indian style Lady’s Fingers – Recipe

Wash your okra well.

Cut them into equal bite size pieces along the length. If you find your knife collecting the sliminess, keep a tissue next to you to wipe it off. Put all the pieces into a large microwave safe bowl (with a lid)

Sprinkle salt all over

Add Asafoetida (hing powder) and Turmeric powder (keeps the Okra green)

Add oil.

Close with a lid and shake well to distribute the salt & oil everywhere

Microwave it on high for 3 minutes.

Meanwhile, prepare the tempering. Heat oil in a small pan. Add mustard seeds. When they crackle add Urad dal (split black gram). Let the fry for a minute. You could do this in the microwave too, but since the Okra is in there,  you save the time by doing it on the flame instead,

Add the oil & seeds to the Okra & Mix well. Again Microwave for 3 minutes

Add red chilli powder if you want a spicier version. Mix well & microwave for a final 2 minutes.
   

Serve as is or with breads, rice etc.

  • 1 lb (500 gms) Okra (fresh lady’s fingers)
  • 1 TBsp Salt (adjust to taste)
  • 1 tsp Turmeric powder (haldi)
  • 1 tsp Asafoetida (Hing powder)
  • 3 TBsp Vegetable Oil
  • 1 tsp Red Chilli Powder
  • For tempering
  • 2 tsp Vegetable Oil
  • 1 tsp Black Mustard Seeds
  • 1 tsp Urad Dal (split black gram) (optional)
