So here’s a pop quiz for ya – What is super crunchy, made with 1/20th of the fat that is required in its original recipe and is ultra joy-inducing? You guessed it – my baked french fries!

You like french fries, right?

That, my friends, is a rhetorical question. I’m merely stating a fact. Everyone likes french fries! I’ve been perfecting these fries for a really long time. French fries are by far the most highly requested recipe here on Foodomania. While there are a gazillion recipes out there on the internet, I wanted to wait until I had nailed the perfect technique to make this classic. And because this is indeed an all time favorite, I looked for alternative ways to cut the fat and yet retain all the goodness of french fries.

And I proudly present to you, the best ever baked french fries recipe you’ll ever need!

I’d really like to say – get the potatoes, cut ’em and bake ’em. But this recipe just involves a few more steps that I believe are crucial to getting that perfect crunchy texture. I’m going to give you a broad outline of what  I think are necessary steps to making this baked french fries recipe. But please feel free to play around with the recipe and customize it to how you like your fries.

  • Potatoes. I personally think those huge Russet potatoes work the best. But it really is a personal choice. Especially in countries where there really aren’t any different “types” of potatoes to choose from, I’d [lace my bet on the largest potatoes available with your vegetable vendor. After all, larger french fries look better, eh?
  • Oil. Regular vegetable oil that has no smell is ideal. That way, all the attention is on the potato itself. Using something like olive oil can make your fries a little over-powering. But then again, if you are okay with it, who am I to stop you? 😉 All you need is a little fat of some kind to get that crispiness. You can use oil / lard / butter or whatever you fancy!
  • Getting rid of the starch. To get that super crunchy outer texture, you need to make sure you get rid of as much starch as possible from the potatoes. This is why most recipes call for soaking the potatoes in cold water for 30 minutes. If you want to be prepared, I suggest you cut the potatoes into fries and wash really well.. then soak in water for as long as  you can. 30 minutes should do the trick, but just imagine how the fries would be if you soaked them overnight in the fridge…. don’t say anything… just imagine the crunchiness!
  • Pre-cooking the potatoes. This would save you a lot of electricity, trust me! Potatoes can take upto 1-1.5 hours to bake in the oven at 200 C / 400  F if they aren’t pre-cooked. Once you cut the potatoes and soak them for some time,  I suggest microwaving them for 5-7 minutes to just get them partially cooked. This way, you can bake them for lesser time. If you don’t have a microwave, you can also bring some water to a boil and let the potatoes cook for 4-6 minutes.
  • Bake vs Fry. Honestly, you’ll never notice the difference. My version of baked french fries are as good as the fried ones, minus all the extra fat from deep frying. Admittedly, baking takes longer than simply frying the fries; but think about all the good you are doing by avoiding the extra oil! If you are in a hurry or want to make a huge batch for a party, then go ahead and fry them up! Just follow all the steps up to the baking part and fry in oil.

Ingredients
  • 2 large Potatoes
  • 2-3 tablespoons Oil
  • 1 teaspoon Salt (adjust to taste)
  • optionally, Spices* (use whatever you like – chilli powder, pizza seasoning etc,)
  • To serve
  • Ketchup / Salsa / whatever you like!
  • Notes

Instructions
  1. Peel and wash potatoes really well.
  2. Julienne cut – cut the potatoes into french fries shape (cut the potato in half. Cut each half into large wedges. Then cut each wedge into 2 or 3 french fries shape)
  3. Soak all the pieces in cold water for a minimum of half hour (you can also close the container place in the fridge overnight)
  4. Drain out the water completely. Take a clean kitchen cloth and place all the potatoes in them and gently dry them. Get them as dry as possible.
  5. Meanwhile, grease a baking sheet well. Preheat the oven along with baking dish in it at 200 C.
  6. Place the potatoes on a microwave safe bowl and microwave for 5 minutes on medium power until the potatoes are partially cooked ** (If you don’t have a microwave boil the potatoes in water for 4 minutes and drain out the water and dry the potatoes as well as you possible can)
  7. Add 2-3 tablespoons oil and mix well.
  8. Get the hot baking pan out and place each fry separately on it. Don’t dump them all at once or they will steam instead of getting crunchy. Spread out as best as you can.
  9. Bake on one side at 200 C for 20-25 minutes or until the fries start turning golden brown.
  10. Remove the baking dish and carefully flip each fry. Continue to bake on the other side for 15-20 minutes.
  11. Get the fries out onto a clean bowl and add salt to taste and spices as per your preference.
  12. Serve hot with ketchup or any dip of your choice!

Oven Baked French Fries – step by step Recipe

Peel and wash the potatoes. Cut the potato in half. Cut each half into wedges. Cut each wedge into a julienne. Follow steps below –

Drain out the water and dry the potatoes as much as possible.

Pre-cook the potatoes in microwave for 5 minutes until partially cooked.

Add 2-3 tablespoons vegetable oil and toss potatoes well.

preheat oven to 200 C. Grease your baking pan well. Preheat baking pan along with the oven. Place each potato slice separately on the baking pan. Spread out as best as you can.

Bake on one side for 20-25 minutes at 200 C or until  the top starts turning lightly golden. Flip each potato fry and continue to bake for another 20 minutes.

Remove the fries onto a bowl and add salt and spices to suit your taste. Do it while the fries are still hot.
