There there. Can you really blame me for this masterpiece? After my love affair with Kinder, this was inevitable. Kit Kat bars in a cupcake? Uh.. YES PLEASE!

Kit Kat chocolates are a favorite among kids and adults alike. And why shouldn’t they be? The subtle sweetness from the milk chocolate, combined with the crunchiness of the wafers, makes Kit Kat one of the best sweet treats available in the market today. Using candies and chocolates to a basic cupcake recipe can yield wonderful results. You’ll need basic ingredients to make the cupcake itself. This recipe is also perfect for vegetarians who don’t eat eggs. You’ll never miss the eggs, trust me! These are moist, buttery and uber-delicious! They also were the perfect recipe to start my association with the Parade community 🙂

Easiest Eggless Kit Kat Cupcakes Recipe ever!
Ingredients
  • For the cupcake:
  • 1/4 cup Butter, at room temperature
  • 3/4 cup Powdered Sugar, adjust for sweetness
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Milk Powder
  • 4 Tablespoons plain Yogurt or Sour Cream
  • 2-3 Tablespoons Cream or Milk
  • 1 and 1/4 cups All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 3/5 teaspoon Baking Powder
  • 1 Tablespoons unsweetened Cocoa Powder
  • 1/8 tsp Salt, (skip if using salted butter)
  • 4 Kit Kat Bars
  • For Frosting (optional):
  • 4 to 6 Kit Kat Bars
  • 1/4 cup Chocolate Frosting / Nutella, (can use any chocolate frosting you desire)
Instructions
  1. Line cupcake molds with liner and preheat the oven to 160 C / 325 F.
  2. Beat together butter, sugar and vanilla for 2-3 minutes until you have a smooth and creamy mixture.
  3. Add the yogurt or sour cream and mix well.
  4. Mix together the other dry ingredients – flour, salt, baking powder, baking soda, cocoa powder and milk powder. Pass the mixture through a sieve and into the wet mixture. Also add 1-2 tablespoons of milk or cream to loosen up the mixture.
  5. Gently mix the dry into the wet mixture until everything is combined well without leaving any lumps.
  6. Crush the Kit Kat bars into the batter and fold them in.
  7. Divide the batter equally between 6-8 cupcake molds.
  8. Bake at 160 C / 325 F for 30 minutes or until the cupcakes are fully cooked through. To know whether the cupcakes are cooked, insert a toothpick or a dry piece of spaghetti into the center of the cupcake. If it comes out without leaving any wet batter, it is done.
  9. Let the cupcakes cool completely.
  10. At this point, you can serve them as is, if you like. Or you can add a little bit of chocolate frosting on top of each cupcake, break a Kit Kat bar and place it on top. Enjoy!
Notes
  1. The time will vary depending on whether you are beating by hand using a spatula or using an electric mixer. Just beat enough until the mixture turns creamy and pale.
  2. Do not over-mix, or you’ll end up with tough cupcakes instead of moist ones.
  3. If you have a convection oven, chances are your dishes get cooked faster. Reduce the oven temperature to 150 C / 300 F and bake these cupcakes to avoid burning of the top of cupcakes.
